Beer Travel / Leipzig/Dresden beers

I'm traveling to Germany with work next week and will be able to take a short side trip to Leipzig & Dresden. Maybe a day in Leipzig and a couple days in Dresden. Besides trying a Gose in Leipzig, are there any can't miss beers I should go out of my way to try while I'm in those cities?

Amounts are really a personal preference. For me, 4oz per 5 gallons is my max and I LOVE hop flavor/aroma. My personal opinion is you really start getting diminishing returns over 3oz per 5g.

The laws here in the south still need some work, but these steps are signs of progress. Props to Free the Hops in AL and Raise your Pints in MS for all their hard work to change antiquated laws.

Thanks for posting this. I have recently made a swamp cooler part of my summer process for ales and it's made me wonder about using it for lagering.
I have a fridge for this purpose, but between finished kegs, cold crashing, etc. it's been a constraint to have it at tied up at lager fermentation temps for an extended period of time.
Using the swamp cooler for ales was surprisingly easy and consistent so now I am looking forward giving it a shot with my next lager.

It's big brew weekend for me, so this week is all about growing copious amounts of yeast.
We'll be doing a 10g Oktoberfest and a 10g FarmHouse Saison.
For the Oktoberfest, I'm doing a yeast comparision to perfect this recipe. I'll split the batch and use WL Oktoberfest in half and WY Baviarian Lager in the other half.

I'm a skimmer as well, but I'm not obsessive about it.
My experience is similar to Gordon's. I feel like it keeps the risk of boilovers down and I want that gunk out one way or another.

I think that I'll be OK with a toasted flavor, but it is an experiment, so we'll see. I'm just not sure how hot and how long it will take to kill most of the nasties that are probably on the pecans.

I'm doing some experimenting with pecans at different stages in the brewing process. Any advice on time/temp to roast pecans to ensure they are sanitized before adding to the secondary?

Will do. It will be my first time using pecans. I'm hoping that brown sugar/pecans/a little vanilla/some flaked oats with a malty base will combine for something in the neighborhood of a praline flavor. I'm starting light in all the flavors and hope to tweak from there in the future.
