did a 5 gal of doppelbock yesterday, the first time i made this is i did a triple decoction, not this time. just a single infusion mash and a little melanoidin malt. hope it turns out. put it on a yeast cake that was sitting under a smoked alt that was ready to transfer so it took off sometime in the night. going strong this morning.

i may try this as i love sam smiths beer
what is the ferment temp?

Fermented at 65F and left in primary for 3 weeks.  Kegged and conditioned at 68F for 5 weeks.  I really hope you can get a vial of 037.  I think it makes the beer.  My buddy and I are pretty hard to please and this was truly an WOW beer....

Dave

Ingredients / Re: Spruce Tips
« on: December 11, 2012, 04:36:34 pm »
i made a spruce beer a couple weeks ago and used saaz hops bittering, and about a cup of colorado blue spruce tips that i had frozen since last spring dropped them in at 20 minutes. you can really taste the spruce. it should turn out to be a real nice beer.

the beer temp will not fluctuate near as much as the air temp, you will probably be good to go.

one of the first dreams i had of my dad after he died back in 94 was of him sitting beside me in the car on the way to his funeral. talk about weird, but you know that was what got me through it.
