Yeast and Fermentation / WY3789

I think this is Orval...I have my first Dubbel er maybe bigger since I modeled it after a Bier Du Jour...

My question-

How long is the ferment on this yeast?  Since it is a big beer and there is Brett, I want to make sure it is done before I mess with it.

I made Fred's Dubbel and put half on wy3789 trappist with brett.  I haven't used brett before, should i leave it in primary extra long?

I made this HB51 Big Brew Day + spices + Jaggery frankenbrew.  I split it on 1098 and 1214.  I have yet to bottle the latter since it was huge and I was lazy.

Anyway, I bottled the 1098 and it is STRONG.  I also get a slight metalic oxydation flavor too (I hate that!) and pretty much figure I'd have that swill for a long time. 

In desparation for a beer last night, I cracked one and didn't put it in a glass.  I drank it straight from the bottle.

I didn't get that oxidation flavor.  Is it because I was getting yeast, or that the beer didn't "open up" like in a glass.  Or is it a miracle

I need to buy/make a mash paddle that i also could stir my bk with.

The $3 spoon isn't getting it done. 

I don't want a 6' one, more like 3'

Anyone make these?  What type of wood?

Not Sure if it is easier than hopbags, but I will definately get better utilization.  I got good flow if I stired a little on top of the T.

All Grain Brewing / brass in my pickup tube?

I posted this in TB and I guess I am having sufficient paranoia to reach out in 2 spots.

The end of the "T" in my pickup has 2 brass barbs for the SS mesh to be secured too.  I think some people do this in their MTs.

Since They'll boil, do i need to worry about lead?

I plan to do a prelim seasoning boil for the brass and the lead free solder.

OK, Here is what I am going to do.  I have a WY Trappist pack (I think 3789) that NEEDS to get used.  SWMBO is going shopping the Saturday after TG and I get to like my burner that night!  (It is tough with 2 little ones and home emprovement)

So I am making a dubbel.  I will make 10 gallons.  5 of which go on the Trappist with brett and wondering everyones thoughts on the 2nd half.  I have 3864 Unibroue ready, 1098, Lager 2007, US-05, I have beer on 1214 That needs bottleing.

I know some whill say-lets see the beer first.  I'll post that after some tinkerin'

But let's have fun here.  I'll dryhop or doctor to the groups instruction.

One thought is pull off 5 gallons and make something. "lighter"  Then drop in a pound of sugar for good measure to feed that 3789
