Kegging and Bottling / Inconsistent Carbonation

Some of my beer fizz over (to the point of emptying an entire bottle) when I open them.  Some don't.  Now, this isn't a batch vs. batch problem.

My stout, for instance.  Some of the bottles just explode when I open them.  Others are fine (and taste delicious).

Does anyone know why this would happen?  Why the inconsistency?

My future wife and I are looking for ways to incorporate craft beer/home brewing into our wedding. One of the ideas is to have customized growlers as centerpieces with flowers.

Does anyone know any sites (or anyone) that are affordable and good?

General Homebrew Discussion / Any suggestion on scales?

I'm planning to use the "Pliny the Toddler" recipe from Zymurgy. But the recipe calls for .75 of a few of the hops (per six gallon recipe). I'm thinking about delaying and purchasing a food scale.

Any suggestions for someone on a "new home and wedding planning" budget?
