Ingredients / Dry Hop Temp

What would be the ideal temp to dry hop an APA? Currently I have it at 38 degrees with 11 psi of CO2 on it in my conical, hoping to carbonate at the same time. What temp would you pick?

Saturday morning I run down to the local LHBS to get some Wyeast 1968. They were out, grabbed two pouches of 1028 instead, suddenly decided to do a ten gallon batch of bitter, OG 1.034.Smacked both packs, do my honey-do's, two hours later start the mash. A five hours later, chilling the wort and neither bag has started to swell. Run up to a different LHBS, pick up some DME and a couple packs of S04 (insurance). Put the wort in the conical, set the temp controller, mixed up the DME (1/2 gallon starter OG 1035), added plenty of O2 and the two pouches of 1028. Sunday morning nothing going on in the starter, checked the gravity, no change. Pitched the S04. Monday, the starter started bubbling, this morning its starting to clear. Question is, should I save the 1028 yeast for a future batch, or pitch it?

A work in progress, have already changed the spout design, and need to gussy it up some, but it pours a half pint (almost) per draw. Will be brewing bitter this weekend to test this out on!

Yeast and Fermentation / Disaster in my brewery

My chiller died, leaving a ten gallon batch of Scottish 60/ fermenting at wildly high temps (mid 90's when I found it). I'm guessing the beer is a total wash, but what are the odds of saving the yeast cake? Think it will be re-usable? It was Wyeast Scottish Ale if that makes any difference.

They are swarming around my taps. Any good methods of getting rid of them? Seems every time I pour a pint, I get one out of the tap.

All Grain Brewing / Sugar to lighten body

I made a Saison yesterday, 10 gallon batch, 1042 going into the fermenter. I ended up mashing a little high (155) due to a couple miss calculations (temp of grain, mash tun temp, still on winter brew mind set, that and brewing in the upper 90's). So this is going to finish a little thicker than I want. So the question is, will adding a sugar syrup to the fermenter lighten the resulting body? If so, how much sugar do I need to add?

I'm half way thru my triple batch day. Batch 1 is chilling, 15 gallons of bitter. Batch 2 is boiling, 5 gallons of porter. Batch 3 will be 10 gallons of American Brown. Things are going very well!
