Other Fermentables / Fermcap in Wine Fermentation?

I use Fermcap in all my beer fermentations to keep the krausen under control. I want to try my first wine and wonder if this is a concern in wine fermentations and if it's ok to use Fermcap here too?

Ingredients / Brewing With Rosemary?

I have an enormous rosemary bush in my backyard and have been wondering over the last many months if I could incorporate it into one of my beers. Has anyone tried this with good results?

If so, what style would it best pair with?
