Kegging and Bottling / keg cleaning

I have seven kegs that I recently purchased earlier this year and brewed enough to fill them all to last throughout the winter.  Some to age and some to drink.  This winter has kept me from using the outside hose to rinse out the kegs once they are kicked so nothing is really settling inside.  I rinsed and sanitized right away which has seemed to work just fine for me.  Now I have a few kegs that are sitting around with little or no beer in it and was wondering if I would have to strip all parts away and clean or just do the same as i've always done as soon as good weather is upon us. Yeast and Fermentation / problem with attaining gravity

Three weeks ago I brewed an Old ale and everything went fine.  I reached the OG that I wanted 1.100 and pitched two packets of Safeale US-04 aerated and put it in my basement.  Fermentation took off just fine so I let it go for about two weeks.  Took a reading to see how far it dropped and it read 1.048.  So I added champagne yeast hoping it would drop some more.  Looking for  FG of 1.029 or so.  After a week same reading no action going on at all in the carboy.  What to do?  Any suggestions?  Thanks.

After putting the priming sugar in the keg after racking it why is it good to put a blanket of co2 while its conditioning?

Equipment and Software / sanitation

I was curious how sanitary a person has to be while handling any and all brewing equipment.  I am constantly dipping and redipping all items including my hands and the rubber gloves I wear often.  Is this excessive?  I always see videos of people just rinsing thier items in sanitation once then placing the piece into a carboy or keg after handling it.  What's the best practice?  Thanks.

Hi all.  If you thought you had no leaks in your keg then you racked the beer in the keg and sealed it only to find out you have leaks.  How does one fix this problem with beer already in the keg?  Thanks.  Worried about sanitation.

Beer Recipes / Looking for a good saison recipe

Looking for any kind of spices that will fit well into a saison recipe.  I want to use ginger but will anything else work well with this spice?
