Yeast and Fermentation / What to brew next

I just got these and was wondering if anyone had any ideas on some recipes. I think I'd like to do a "no-boil" for the Berliner Blend (ECY06). I'll most likely do a Saisson style with the Farmhouse Brett (ECY03). I am open to any and all suggestions.

All Grain Brewing / Am I mathematically challenged?

So I've getting into the juicy part of the book, "For the Love of hops", the recipes. I came a cross a recipe that simply perplexed me, New Zealand Pale Ale (page 248). For some reason I can't really figure out the grain bill.

75% Pale malt
10% Munich
8% Caramalt
2% Pale Crystal malt

Oh well, I probably won't get my hands on any Wai-ti this year anyways.

I have a vial of this stuff and can't really figure out what a good beer to use it in would be. I was thinking of doing a 100% Brett Beer with it, maybe a Saison? I am open to suggestions.

Yeast and Fermentation / Slight mess up, should I worry?

I brewed a simple pale ale yesterday. Put the bucket in ferm chamber, but forgot to put liquid in the airlock. The fermentation chamber is a brand new chest freezer than hasn't has anything it really, except for a bucket. So I'd assume the envirment in there is very sanitary. It was probably about 12 hours with out liquid in the airlock. I used a starter of ECY12, if that makes a difference. Should I worry?
