Other Fermentables / Cider Yeast options

I've used White Labs English cider yeast and White Labs Champagne yeast any other suggestions I may want to try?

Mantorville Brewing company - pick up a growler of one of the fruit infused beers
Flat Earth Brewing - pick up a growler of Black Hilicopter

Beer stores
Four Firkins - St. Louis Park
The Ale Jail - St. Paul

I had a strange experience with this the other night. I pitched it directly into my carboy - the temp was a bit warm 78ish but it was late. Woke up the next morning and no bubbles in the air lock yet so I gave it a shake to aerate it and the head space in the 6 gal carboy instantly filled up and foam was spraying out through the air lock. It was like I dropped a mentos into a coke.
Can anyone explain what happened?

Thanks that's what I was wondering about I have a 8 gal pot so I'll start with 4.5 to 5 gal of water and half the extract.

I'm in the same boat little kids - I've brewed all but one batch after 8 pm on Sunday night.
I'm an extract brewer so I usually get done around midnight - the solitude is nice.
Brewing seems to go well but bottling is a b*tch

Ok I have access to an apple press and apples - how many apples do I need to get 5 gal. of cider?
It's an early apple crop with lots of utility grade apples avaialbe so it's cider making time.

it stands for Wally's Ale Haus and also my dad's initials
He was a brewmaster for Schmidt's Brewery when I was growing up - now that he's in his 80's I decided to try homebrewing and pick his brain for advice and ideas - and see if I can brew something he likes.
