I got one and the handle spins and does not restrict the regulator, its a little tight inbetween but no restriction to the regulator.

yeah go ahead and compost, mix in grass cuttings or hay to help eliminate the smell or if you have a dog make yourself some biscuts.

2) Get your grain crush right. If you're grinding your grain with a Corona Mill, you'll be lucky to get 60% efficiency. There are plenty of pictures on the web (or in books like John Palmer's How to Brew or Greg Noonan's New Brewing Lager Beer) of what a good grain crush looks like. It should be about mostly fine "grits" of varying sizes and maybe about 10% flour, with mostly intact husks, and no intact or mostly intact grains. Ideally, you want fine flour inside virtually intact husks, but that's not possible even with professional grade equipment.

I haven't been following this thread but FWIW I use a corona mill and I get 70-75% efficiency all the time.

it will taste great.  Its not that far off from what a saison should be. mash on the higher side, say 156- 158.
you should be ok with the yeast, if I am not mistaken that yeast is a blend of WLP saison and Brett.  it will finish nicely with a 2000ml starter.

If you fear it, use the equipment, fermenters, tubing, etc. just for the sours and replace it with new equipment for other, normal brews.

I am really not sure since it has been awhile since I bottle conditioned but isn't a "couple" of cups of water to much, shouldn't it be just 1.5 to 2 cups per 5oz.  I would tend to think that there was to much dilution of sugars, but I really don't know, I am just guessing.
