For those who are self-distributing to on- and off-sale retail accounts, what sort of credit terms are you offering?  Do you even offer credit terms?  For a new brewery, it would seem that cash would be the most sensible option, but are retailers willing to do COD for your kegs/cases?

In Minnesota, we aren't permitted to extend credit beyond 30 days to any retailer.  But just because you can doesn't mean you should.  I mean, cash is always better, right?

Not to hijack, but how many of you guys who aren't filtering are using finings?  And, for those using finings, are you adding them in addition to a cold conditioning period or in place of one?

I also got a quote from Wild Goose. Their semi-automated machine is 2x the price of Cask's. But I do like that you can easily add automation modules. Does anyone have any personal experience with either Cask or WG?

Outsourcing packaging seems to be on the rise right now, especially among newer crafts. I understand the appeal -- lower capital costs, getting packaged beer to off-sale retailers instead of draft-only sales (which yield a greater margin), and not hiring any direct labor for packaging.

I know there is a company in San Fran (IIRC) called the Can Van that has a mobile canning line for hire.  There's a guy here in Minnesota who has a mobile bottling line for 22 oz bombers.  We are mostly likely going with a semi-automatic canning line from Cask Systems in Canada so that we don't have to rely on outsourcing for off-sale retail packaging. It will require a greater cost up front, and more man hours, but I'd rather keep it in house and be able to package when/how I want to.

Stay away from DE.
That is my opinion.

Any particular reason?  Is it too costly?  Too difficult to maintain?

I used to get 88-90% efficiency with a hochkurz decoction mash.  My normal BHE is closer to 83-85%.

Thanks for the comments!  I'm glad that people are getting something out of that post. 

Stealthbrewer: to date, I have not heard of anyone being prosecuted for exceeding the limits or violating any removal/use restrictions.  But I have heard of several state-level agencies enforcing state laws that are more restrictive than the federal homebrewer's exemption.

There's some damn good brewers on the forum, don't get me wrong, but I don't even believe 90% of commercial breweries out there are making "great commercial beer"....

It's like how 90% of people who work at music stores aren't virtuosos.
