The guy making my new tap handle sent me a picture of his work.



I collect chess sets and they are integrated into the design of my man cave. So of course my kegerator has to be integrated in. I am upgrading to a duo tapper. This is the same guy that made my last tap handle.

Kegging and Bottling / Upgrade time

My duo tap tower and hardware to install it are due to be delivered today. It is a 3 inch tower that will be replacing a 2 1/2 inch tower so I will be doing some modification to bolt it on. No problem. What I am apprehensive about is the modification to my regulator. I need to take the shutoff valve off, put a splitter on, and put the shutoff valve and the new shutoff valve onto that. And I have never been any good with that teflon tape crap. I have been watching youtube videos on how to do it. Once I get passed that I have a red ale that I just tapped into and a nice White Wheat beer that I will be kegging this weekend.

I wasn't sure what to do with my old tower. Then I got the idea of attaching it to a garbage can lid. A brand new garbage can just for this. I found one at Mennards with a really nice flat heavy duty lid. I am going to put a 10 gallon cooler in the can to hold my keg. Then I can just put ice around it. I am going to convert a 20 oz C02 bottle like they use in paint guns to gas it. It won't carbonate the keg but it will dispense it. And wala I will have a picnic kegerator for barbeques and stuff.

Waste not want not.

Beer Recipes / End of the World Milk Stout Revisited

My End of the World Milk Stout has been in the bottle for 5 months now. I opened one up last night and I must say it was the best tasting stout I have ever tried anywhere. It has gotten incredibly smooth. It had a bit of a bitter bite when it was young but that is all gone now. The toasty flavor and silky mouthfeel are perfected. This beer is a masterpiece. Now if I can just hold onto it until winter I will have the perfect cold weather stout to enjoy.

This is billed as a hoppy wheat beer. It is a year round beer rather than a seasonal. This is a wheat beer that features several hops. It does have a nice aroma though I can't really tell what hop I am smelling. The flavor is hoppy but not so much so that I cannot taste the malt. Overall this is just a really nicely balanced beer.

I bought some of this and then found out it has fruit in it. I wasn't looking forward to trying it after that but when I did I was pleasantly surprised.

It is a light Belgium Ale. It pours light in color and extremely clear. Very nice white head. I didn't notice much aroma. The taste was very clean and balanced. I honestly did not detect the soursop in it. The Cascade and Centennial hops did have a presence but it was subtle.

On a scale of 1 to 10 I would rate this beer as delicious and refreshing.

Ingredients / Simcoe hop question

I wasn't sure whether to post this in recipes or here. But given the question mostly involves a variety of hops I decided to brew it here. I picked up 3 oz of Simcoe hops. I am trying to figure out what I want to brew with them.
My favorite beers are reds, ambers, and browns. I do an occasional IPA but mostly for my friends who like hoppy beers to enjoy when they come over. I have plenty of Columbus, Cascade, Fuggle, Sterling, Goldings, and Williamette on hand. Do Simcoes play well with any of these?
Whatever I brew I pretty much want the Simcoe to dominate so that I can learn what they taste like. I don't know that I have enough of them to do a single hop and really get a feel for them.
How would they be in a white wheat beer?

Yeast and Fermentation / Holy Attenuation Batman!

My New World IPA started at 1.063 and finished at 1.006. I had been having some doubts about my hydrometer so I bought another one Friday. I had both of them in the beer at the same time today and both read identical. If this was a malty beer I would not like that much attenuation. But I wanted this to be a hoppy beer and the higher the attenuation the less malt gets in the way of the flavor of the hops. I think the reason for this attenuation was I mashed at 148F for 90 minutes, and I used Nottingham yeast.

 I had dried krausen from the level of the beer to the top of the bucket and completely covering the lid. It was a lot of work to clean up. In 2 weeks we shall see how tasty the beer tastes.

Can hydrometers suddenly and without warning go wayyyy out of calibration. Today is the second time in a row I was expecting my beer to hit around 10.50 and it hit 1.066 instead. I can't believe my efficiency suddenly took that big of a jump.
