Distilling, to me, isn't worth the effort.  The cost-benefit analysis of distilling vs. going out and buying your own bottle of whiskey is a clear choice.  It's cheaper, easier, and less work to buy your own, not make your own.

Isn't that true of brewing as well?

From what I gathered by talking to a guy once who distilled his own spirits, it's A LOT of work. Homebrewing gains you way more than buying beer.  Distilling your own gains you way less than buying your own.  You might get higher quality, but it's gonna cost ya.

Here's my 1554 clone recipe.  I got assistance from the guys at New Belgium on this one.  I've yet to brew it, but I'm thinkin' it's pretty close.  And yes, the guy insisted on quite a lot of carapils.

After much discussion, this thread will allowed to continue as long as the content doesn't stray into the distillation process.  This corresponds with the trend of breweries getting involved with distillation.  We've put a lot of effort into disproving the notion that homebrewers are moonshiners and don't feel that the organization as a whole benefits from discussions that confuse that effort.

Why is everyone so afraid to talk about this?  This isn't Nazi Germany for crying out loud.  Freedom of Speech!  Stand up for your First Amendment rights!

He said black ale, not stupid named rip off of an east coast style ale.  That "Cascadian Dark Ale" crap can take a hike.  

There's some pretty decent looking 1554 clone recipes kicking around somewhere...can't seem to find them at the moment.

This has always been my understanding as well....but in the past I have experienced slightly better attenuation from US05 over WLP001 using the same recipe.

This is something I'd like to look into.  US-05 gives me too much attenuation, drying out my beers too much.  For once I'd like a beer to ferment down to 1.015 instead of 1.010.  Maybe I should just start buying liquid yeast and keeping some on hand at all times.  But dry yeast is just so damn easy and quick.

I'm going to Millstream Oktoberfest in the Amanas this friday to celebrate.  I don't plan to be very coherent the next day.  My dad's band is playing and friends and I are going to party and drink good beer.  Prost!
