All Things Food / Re: Looming bacon shortage
« on: September 27, 2012, 08:22:41 AM »
There's going to be a shortage yet they are advertising like we don;t eat enough of it already.

My prediction is that unit sales next year will be down, but per-unit and total profit will be up. Shortages are good for suppliers, bad for consumers.

The important question is, did you chill and drink it?

They went down the drain, and they smelled pretty rank when I dumped them out. While I have faith in my tolerance for mycotoxin, it wasn't a risk I wanted to take.

I know people like Sierra Nevada and Boulevard have phased out their twist-off bottles because of QC issues. So I wouldn't bottle anything in a twist-off you want to last a long time.

FWIW I found a six pack of Bud Light from 2006 someone had hidden in the attic of the bathhouse in our campground. They were twist off and they were all only 1/3-1/2 full. They were definitely still sealed, so I'm guessing the bottles don't really seal that well and they evaporated.

The Pub / The Dunning-Kruger effect
« on: September 27, 2012, 07:38:42 AM »
I just learned the name for this phenomenon. It explains so many perplexing things in the world.

"The Dunning-Kruger effect occurs when incompetent people not only fail to realise their incompetence, but consider themselves much more competent than everyone else. Basically - they're too stupid to know that they're stupid.

If you have no doubts whatsoever about your brilliance, you could just be that damn good. On the other hand... "

Denver has a pretty extensive light rail system, and over 300 miles of dedicated-use bike/pedestrian trails.

The bank's job is to make as much money as possible. Their job isn't helping people to make sound financial decisions. Banks set their credit limits and rates to maximize their profit. If they can get some sucker to put $25k on a card and charge him 15% APR, (and hope that sucker doesn't understand why APY is different) why not?

I lived in Denver for a few years with no car. It was great and I paid $0 for car insurance.

I have an aunt that lives in Round Rock. It's been a while since I've been there, but I remember Austin being pretty nice. It reminded me of Madison, which also seemed like a pretty nice small city.

Ingredients / Re: Heidelberg Malt?

Sounds like it's highly modified, which I love..."extremely high enzyme power".

You'd probably hate Heisenberg malt then. Its enzymatic power is highly uncertain.

I've never used a blow-off tube. I've only had one fermentor explode, and that was a robust porter. But, I also do incremental feeding on my Belgians.

I think Denver would be a good fit. Weather is almost always great (300+ sunny days a year) and DIA is a nice airport. The beer and food culture there is great too, but nothing is ridiculously expensive. Demographically, Denver is as diverse as LA, though the total pop is a lot smaller. Large minorities of south-east asians, Koreans, and east Africans. So there's a gamut of great food from little hole-in-the-walls to upscale dining.

I grew up in Grand Junction, and I like it there but it's not close to anything. Fort Collins is nice too, but it's about an hour from Denver. Boulder is one of the most homogenous places I've ever lived, plus really expensive. But, if you have the money and you like rich guys pretending to be liberal, Boulder is a good place to be.

Going Pro / Re: How I Raised $1.25 Million To Start My Brewery
« on: September 26, 2012, 07:35:28 AM »
Before I put my brewery plans on hold, I was planning on starting one business to buy the equipment and then renting that equipment to my brewery business. I thought it was a little bit silly and maybe overly complicated, but I'm glad to hear a lawyer came up with the same idea.

If you're doing a dark roast you should let them breathe for a few weeks. For light toasting waiting isn't necessary.

Heavy cast iron skillet, keep them moving. I do it that way If I need to make small amounts of toasted grain, from lightly toasted to black barley.

I'll throw the grain in the oven if I need to do a lot of it.
