I recommend you do some research as to the bitrate you're going to rip to. 

I believe the iTunes default is 128 kbps.  It this is going to be your permanent archive, you might want to consider 256 kbps or higher.

It's coming analog from vinyl.  256k is a waste of memory.

why do you say this? I would think coming from analog you would want the highest bit rate you could possibly fit on your harddrive! analog is essentially infinite bit rate as it is continuous rather than discrete.

The only real reason to take the temp down so slow is to keep the yeast working cleaning up the beer. If you do a "forced maturation" or d-rest then the slow cooling toward lagering temps really isn't beneficial. At that point you can just crash cool.

I agree. A couple of days at room temperature and then crash. Works for me and I don't have to remember to mess with a thermostat every day.

It won't use the gas faster, but it will "run out" faster.  At a colder temperature, more of the CO2 will remain as a liquid.  I haven't done the calculation, but I doubt it is a very big difference.

I find that my gauges work better if they are outside of the fridge, so I keep them and the CO2 outside.  Whatever works for you.

Fridge temps. won't make any difference in how fast you use CO2. You're taking CO2 gas from the top of the tank. The bottom part is still liquid.

Consider this: Our annual ABC license that allows us to sell beer is $1,000. Your local regulations may be different, I dunno, but you are going to really have to work hard to make any kind of profit on a 5-10 gallon system.

He never said that he was limiting his brewing to 5-10 gallons.

Everything in moderation. A hundred degree fermentation will obviously result in crappy beer, just like only rinsing a fermenter will likely result in an infection. I'd rather take a chance with slightly higher temps than risk anything with sub par sanitation.

Fermentation temp control is the most important step after sanitation...

I'd say it is every bit as important as sanitation.

I put it above sanitation. I've had too many shoddy batches resulting from temp swings in fermenters that were thoroughly sanitized.

Before I got my temperature under control, I had some beer that I didn't prefer, but they were drinkable. Poor sanitation almost always results in a dumper. Sanitation has to be on top.

I tried a filter and that was a disaster, so it's now an open copper tube. Sure some leaf hops will get through there. For the most part I use pellet hops anyway and they're sacked.

I know it's magnetic, but jamming or partial jamming can hurt the impeller and with the closer spacings this can get worse.

Don't get me wrong, I like the idea of the larger impeller, but it scares me a little.

I'd be worried about the large hop pellet, leaf, etc.getting close to that large impeller and jamming the pump. I've heard mine make some pretty strange noises after dumping some Irish moss into the boil.
