Thankyou for the replies. How does this sound? Using odds and ends around the house, 9 lbs Munich, 1/2 pound caramunich, thick mash at around 154. For hops on hand I have mt hood, and chinook. I am thinking chinook? For yeast I have 04 or Nottingham. I am thinking the nottingham will attenuate too much, so S 04?

That sounds good, I'd say forget about styles. If you wanna get a good feel for it just make an all-munich beer and use a clean ale yeast. I'd use mt hood instead of chinook though, chinook has a stronger flavor.

Was it an 11 gallon batch? I never brew batches that big, but 1.5 gallons of water lost in a 75 minutes boil doesn't seem like a lot for a batch that big, maybe you did need a more vigorous boil. That being said, 1.067 isn't that bad, so yeah, RDWHAHB  ;)

Thanks a lot!. No, it hasn't been used. They sell those to people that buy tequila in bulk, in a plastic container so they can store it and age it in there, but it's the same material as the barrels they use in the distillery and it has the same kind of toast. BTW do you know a good Arrogant Bastard clone? I love that beer, but everything about it in their website is CLASSIFIED. :o

So I got a 5 gallon white oak barrel from a friend who's family owns a tequila distillery. Any ideas on what I can do with it? ::) It hasn't been used.

Yeah I thought it had something to do with the fermentation. Would dry-hopping in the keg for a week or so hide some of it ? :-\

I pitched when the wort was at about 70 degrees, and fermented it between 65-70. The yeast was US-05.

I made an APA about 3 weeks ago, which I was expecting to be at 1.058, but my efficiency was way higher than expected and it came out at 1.068. The final gravity was 1.014 so the ABV is about 7.2%. I kegged it a week ago and tasted it today and it had a very strong alcohol flavor :o. Do you think there was any issue with the fermentation or just too much alcohol for the style?

This is gonna help me too, I was gonna post about the same thing but you beat me to it. I don't really care about the BJCP exam right now, I've only been brewing for about 9 months and I want to become better at judging beer, appreciating every flavor in it, and detecting off-flavors. I don't know anything about the course but for $200 its not really expensive. Any comments on it?

I tried those once too. I used 4 tabs per bottle and after 3 weeks there was almost no carbonation, if any. After 3 more weeks carbonation was good though, but corn sugar is way better IMO.

I live in Mazatlan, Mexico, a small town on the west coast, and I see that everyday. A lot of americans come here, and some even live here, and I've never seen ONE trying to speak some spanish, they expect everyone in here to understand english. Of course most people here do speak at least some english, since its a touristic place.

I'm actually american, but I've lived here all my life, so english is my second language. I try to practice a lot cause I like to travel to the US pretty often. Mostly because of the beer. ;)

Haha, I'm new to the hobby too. My first batch of pale ale was about 8 months ago, I read Papazian's and John Palmer's book before I started brewing, so I thought I knew what I was doing, but it was a disaster, I actually ended up throwing it away. Tried again the next day and that one came out really good. It became an obsession after that.  ;D

For me it wasn't a specific beer, but a place. Venice alehouse in Venice beach, I was amazed by the beer in there. After that I started reading about beer styles, and found out about craft beer and home brewing. I still don't remember what beers I had in there, I just kept telling the waitress to surprise me and they were all so good. The waitress was hot too.
