I think an immersion chiller connected to a submersible pump is the simplest to use.  corrosion is not an issue for this short of time.  throw the submersible pump in a cooler full of water with bottles of ice in it.  this makes your cooling water 32 degrees and is a great heat sink.  just too simple and cheap to overlook

Again why i don't like the idea of "craft beer" monicker. and yes i think american light lagers are good beers and can be brewed with great "craftmanship"  i think some people drink crap beer just because it is from a "craft brewery"  and i still think large breweries can make good beers.

you could also use the white labs sanfrancisco lager yeast.  i think it is 810.  i have used it when i had some difficulty controlling temp.  it will tolerate a little warmer temp.  i still think you are better off getting the temp problem fixed first as i wasn't happy with how it turned out.

I am not too in to craft as a definition.  And big breweries can brew "craft brews" eg beach bum blonde ale.  I went to a tasting this weekend of about 30 different "craft beers"  and they all tasted crappy.  I would still rather drink a bud than that swill when i am in the mood for just something cold and refreshing.  Bottom line is if they produce a product that is worth spending your hard earned gold on then it is a good beer.

the knives are made by robert herder in solingen.  it must be a rust free version of their thin carbon steel blade. who knows, but they are sharp and stay that way.

Never heard of rostfrel - is that super duper high end?

I don't know if it is high end or not. I like them better than the wusthof the kids have brought.  they are not stainless, just very sharp steel but they need good care since they are not stainless.  I have never seen them in the USA and if not for our solingen guests would not have them.

i have more knives than i can use.  we have a complete set of cutco knives but we host a foreign exchange student from solingen germany every year.  they always bring knives from wusthof and robert herder rostfrel every year (those are my favorites)

Congrats on the first beer.  I don't know of specific hops you may want to try, but look and see what some of the other recipes use.  also look at freshops (online hop seller) they have a good description of various hops characteristics
