You may also want to consider mashing higher to keep some sweetness in the beer. This might help fool the palette into thinking it's tasting orange instead of grapefruit or other bitter citrus.

I look forward to Sierra Nevada's Celebration every Christmas. I not only stock up on theirs, but try to brew a couple batches of a "clone" of it.

Man I love Celebration.

Another than I don't know if it's a Christmas beer but is available after October is Lagunitas Brown Shugga. Heaven in a bottle...

The dry hop aroma will fade with time. It could be that you're not used to drinking Indian Brown as fresh as it is when you brew it yourself.

I can attest to this...had some fresh Lagunitas Brown Shugga and then some that was old...huge difference. Both good beers but the fresh one was awesome!

I thought there were wide (like 36") trays in Home Depot that i could use to soak the longer brewing stuff. But I can't find any. If you know what I'm talking about can you link to Home Depot or Lowes or Amazon for me?  :o
