The bottles will carbonate faster at 20 that at 16.  Once they're carbonated, you can reduce the temp if you'd like to.

Well put mdixon - astringency and diacetyl arte the most overdiagnosed flaws - its rather annoying to many competitors.

Took the words right out of my fingers, Paul.  And it's not just judges...I hear so many homebrewers complain about astringency, yet I seldom find it in my beers or those of others.  Not to say that it doesn't happen, but it seems like many people interpret other characteristics as astringency.

I've used Pacman many times and never gotten diacetyl form it.  Maybe you didn't give the yeast enough time to consume it?  Also, diacetyl can be caused by an infection, but let's not go there for now!

I'll give another thumbs up to 1007/036.  If you make another alt, it's worth your while to try to get ahold of one of those.  OTOH, I've made award winning alts with US-05....

It's amazes me every year when I see the NHC winning recipes in Zymurgy.
