The weather here is still cool enough to get in one more batch of alt. I can ferment it in my garage and it'll stay in the 52-55 range. Got my yeast started yesterday.

Part of me sees this is ridiculous though, as the commercial hops I buy are likely subjected to just as much mistreatment.
I know this isn't what you were asking, but there's no reason you can't do a partial boil with AG. Your efficiency suffers, but it's possible.
I think i menat that a longer mash would create a situation where more tannins would be extracted, which sounds like has nothing to do with PH.
