If you think DMS will be an issue leaving the lid on partially take a look at almost every commercial system and see how it is entirely covered except for the part where the chimney is.

They also have kettles designed to keep condensation from dripping back into the boil.

That's what they are for Do you mean to bottle condition in them with priming sugar? They may explode as they are not designed for the pressures of bottle conditioning beer.

I have one of these coolers. I tried adding the bulkhead through the sidewall since the drain is at that weird angle. I can't get a proper seal since the sides "smoosh" when the bulkhead is tightened. I have to get some food safe silicone to seal it up. Until then I just make what I can in my 50 qt and mash thick (1:1) when I go big.

I recently had a wild yeast infection. The ferment took 72 hours to kick off. Never skipping a starter again. The ferment was very cloudy, never cleared up which was my first indication of something wrong. Final gravity was about 1.002 and tasted like solvent.

The eZymurgy apps are not yet available, but they are coming. It's proven more challenging to make this happen than we anticipated, but we do have work underway and expect to launch sometime around April.
