Shame to be without Willamette, they are dirt cheap  :D

I am thinking the Citra actually overpowered the Amarillo at a 1:1 ratio,
but time will tell.

Could be good to go easy, the force is strong with this one.

My first impressions are that they could be wicked strong in the flavor department.
I will be interested to hear how they turned out in that Kolsch.

I didn't have any dirt hops
so I tossed an ounce in late on a porter
hope that was not a nasty mistake. :-[

Excellent, I love this hop combo.  I call it Simarillo.

Looks really good to me.


I had to scale down the simcoe to try to keep the IBUs in range for pale ale. 

You <could> skip the 60 minute and just use more late to pick up the IBU
this way you could scale up the Simcoe ;)
And start at 15.

Either way, the Simarillo rocks.  Have fun.

Agreed.

I personally like IIPA young as well,
but I have also let these same beers age,
and have enjoyed those as well, albiet a different product.

I would say try it both ways...young and aged a bit...see what you like.

As to the original question
If you are going to dryhop an aged beer,
I think it best to bulk age it, and then 10 days before packaging...dryhop.  The fresher the better.

I guess for me,
I fear the soiling of the "organic" label
and that in the future
it may be become blatant propaganda
er, are we there already?

I think, if you are able, the most valuable step
may be to look LOCALLY for these goods.

I will be supporting my local farmer, just up the road, who can sell me beef that are sustainably raised on his own pasture.

Mind you, it is spendy flesh
and I would likely be driven to collards if I was not wealthy.
Is that not the dilemma?

Well if you don't chicken out...let us know how they worked out.  8)

will do, although only using them for bittering, so I don't know how much I'll glean from that tasting.  will be using them in a pale in the spring though.

I thought you were showing considerable daring...going with the Citra to bitter your old ale... :o
What else would you normally bitter with in an old ale?

I still have not experimented with my Citra...but I am planning on using them later and real late in an ipa soon.
I think I have too many hops ::)
