Ingredients / Domestic Hop Help (Hallertauer Cultivars)

I have grown fond of the taste of Crystal hops in my kolsch, however I can't get them pellatized from hopsdirect right now (and I need to buy them by the pound - this is for 40 gallon batches). I am trying to stay with US hops now and avoid using German hops for my kolsch - even though I like Mittlefrue and Hersbrucker very much, I enjoy using domestic hops in my beer almost exclusively now. I have used Vangaurd and Mt Hood a little - but the thing is I have only used them a little and I have kept them in the background. With my kolsch, lately, I have been making it with more hop character now.

So my question is, out of the domestic Hallertauer type cultivar found here: http://www.hopsdirect.com/hops/pellethops.html - what do you consider you favorite aroma/flavor hop?

Yeast and Fermentation / Origins of Chico strain?

Does anyone know the European origins of the Chico strain? I know that people say that it is originally the Ballentine strain - but does anyone know where it came from before that? Germany? England? Scottland? It sure acts like a top cropping German strain and makes a great alt.

Equipment and Software / me no understand refractometer correction....

So, using the hydrometer correction calculator found here: http://www.onebeer.net/refractometer.shtml gives me incorrect results. For instance, when I type in my original brix (12) and my final brix (5) the reading says says my final gravity is 1.002 .... however, the OG was ~1.050 and the FG is around 1.012 according my correctly calibrated hydromter (the refractometer is also correctly calibrated) ... so what's going on? Is that calculator off or WTF?

I was coming home last night in a really bad storm with an ominous, eery looking sky when a tornado alert came on the radio. The rain had been pounding, intermixed with pea sized hail, when suddenly - everything went completely still. The storm sirens started wailing and the radio reported a funnel cloud had formed over Huntsville. At the time I was stuck in slow moving traffic trying to get over Chapman Mountain. I managed to get off the main road, out of traffic and onto a back road that went parallel to the Hwy when suddenly stuff started falling out of the sky! It looked like roofing material, paper, all kinds of crazy stuff. I was scanning the sky from my limited vantage point when a super gust of wind sheered down upon me and nearly lifted my truck on two wheels....  :shock: I'm not exaggerating! I looked out the window where the gust came from and there was stuff flying at me ... looked almost like streamers, and at the same time a transformer blew! Then my truck shook like a train was coming through. I was white knuckle scared and pulled off in a nearby neighborhood thinking about getting out and laying down in a ditch. Storm sirens were blaring. I stopped for a moment and that weird calmness came back again - so I decided, wisely or not, to head for home, ignoring speed limits completely.

My mom calls my cell phone and asks where I am ... I tell her I'm on 72 E. She's watching the TV weather alert and tells me there's a tornado heading right down 72 E. I'm not sure if the thing is behind me or in front of me! I get off 72 and start heading down Ryland Pike which pulls away from 72. My mom starts quoting places in the path of the funnel cloud ... 72 E, Maysville, RYLAND PIKE!!! Holy sh!t, that's is exactly where I am!

The sky was ominous black - I mean more black than you can imagine - except it was lit up by frequent strings of lighting in the clouds. I pass a Dollar General and that place is PACKED. People are getting out of their cars and running in for shelter. I figure, the tornado probably looks at a Dollar General like a condensed trailer park. That thing has a bull's eye painted on it for sure. I have no idea how I am going to die, but I am determined it will never happen in a Dollar General. There was only one car on the road, a Sheriff headed the other way! I wondered if that was a bad sign. Regardless, I didn't slow down and he wasn't about to turn around after me.

Anyway, I made it home without any further excitement and, while it was wet it didn't look like any wind damaged had hit my cove. No trees down. No abundance of branches down. Dogs were fine. Wife and kids managed to get home about a half hour later. All was safe.

I have to admit ... it was the most exciting drive home I have had in a long while.

Well, I hurt my back a few weeks ago and was not able to move the carboys out of the deep chest freezer (a kolsch) so rather than transfer to carboy I just turned the temp down to 32 on the freezer. Well, the temp changed sucked the air lock water into the carboy so I refilled it. Today when I finally went to keg the beer I noticed the air lock was low again, no big deal I thought. well, the beer is partially oxidized. Not so bad I can't drink it but certainly has some of that sherry notes. It is even darker than I expected. I guess I was thinking that at those temps the beer would be alright - guess not. this is one reason I don;t secondary in the carboy. Guess if you do you might invest in a dry air lock.

All Grain Brewing / PH Meter tips and Qs

Dug my pH meter out and was surprised to see that after several months it seems to work just fine even though I was out of storage solution and stored it dry since the summer. Anyway - I ordered more solution and have some questions:

#1 - can you reuse the calibration solutions? Seems stupid to just pour them out afterward. But I do because i don't know how stable they are,

#2 - Do you need to rinse the calibration solution between tests? I do (with tap water) but was wondering if this skewed the results.

#3 - how exactly do you store the meter? I am currently storing it on the kitchen counter in a Kolsch Stang filled with storage solution to cover the tip. That is a pain though. How much longer will the solution preserve the tip compared to stroing it dry in the case? Seemed to work fine for several months for me. What's the deal?

Kegging and Bottling / Why the preference for Ball Lock?

I have always wondered this but never posted it in any forum before. Why do most homebrewers prefer ball lock? Pin Lock has so many advantages over ball lock. You can't mix up the gas with the beverage post (or vice versa) by accident. Both the gas and beverage QDC come off so much easier and never get stuck (sometimes my Ball Lock kegs have issues going on and off especially when it has sat for a while). And yet, even though I have pin and ball lock kegs I find myself preferring the ball lock for some reason and I can't figure it out.

A group of guys and myself are building a 1.5 bbl system and I don't relish the idea of going to the store and buying 50 gallons of RO water so we want to invest in a system. One review on this system I posted said it wasted friggin 6 gallons of water for ever 1 gallon RO water collected. WTF???? It that right????

Anyone have a large capacity system that I could look at - something semi-reasonable. Something under 500 bucks would be ideal.

Beer Recipes / Old Ale

I have a smack pack of WYEAST9097 Old Ale Blend and LOTS of sacks of Maris Otter laying around that I need to use. Never brewed an old ale before. I have a lot of crystal in the recipe because of the Brett strain in the yeast blend. Also bumped up the hops quite a bit, maybe too much? Take a look see and see what ya'll think.

2 oz Challenger (8aa) @ 60

One of the bonuses of being self employed (alright, unemplyed  ::) ) I get to brew on a WEDNESDAY!! I'll also be smoking some salmon. Beautiful fall day.

I'm brewing a FWH Kolsch and a Wezienfest (a cross between a Hefeweizen and an Oktoberfest).

Wish me luck on the FWH Kolsch. I'm using crystal hops. Just trying something different but I may chicken out at the last minute.  :-[

All Things Food / Spicy Basil (or cilantro) chicken

8 pieces chicken tenderloin
6-10 cloves garlic (1/2 minced, half sliced)
4-6+ spicy red tae chilli peppers, chopped, veins and seeds removed
2 or so tbs olive oil
3 cups water
salt
4-8 anchovy fillets (half can of fillets)
4-6 tbs mild chili powder
Soy Sauce (4-8 splashes)
1/2 cup honey
8oz pack shrooms (shiitake if you like or portabello also work very nice)
red bell pepper (or cabbage) optional
broccoli
basil and/or cilantro

Fry garlic until light brown. Remove. Add chilis and cook 2-4 minutes. add chicken (chopped into medalins) and cook with chilis until browned on all sides (but not cooled all the way through) ligntly salt. Removed and place with garlic.

Add water to pan and apply heat. While bringing to boil add chili powder, andchovies and honey and soy sauce. Bring to boil and vboil 5 min. adding more water if necessary and add chicken/garlic/chilis back  into sauce. Salt to taste. Add shrooms. Simmer shrooms in sauce until they begin to shink on low heat. Then add broccoli and strips of red bell pepper. Turn up heat to boil/steam veggies. Add basil/cilantro last 2 min. Serve over brown rice.

Ingredients / Help me FWH my Kolsch

I want to try someething different with my kolsch and want to FWH with crystal. I know Denny is the FWH guru. I also know he has walked me through this before... :-\

Anyway, I am going to brew this tomorrow - let;s say I want to to a FWH ONLY kolsch with crystal, targeting about 28 IBUs - how do I do this?
