I had to change the air lock 5 times in one day when I put my Double IPA on a yeast cake once.  At least it didn't blow the lid off of my fermenter.

This is good info.  I plan on making a BW on Jan.1st (made my first last Jan.1st) and this sounds like a good plan of making two beers since BW takes so long to enjoy.  How do you add the crystal to the second runnings?

I would use an American Ale yeast (SA 05, Wyeast 1056) or an English Ale yeast.  I think it would allow the flavor of the grains to shine through better.  On the other hand, the belgian yeast might add a different flavor that is not typical of porters. :-\

Let us know how this turns out.  I was thinking of trying something similar - a standard Belgian grain bill and yeast, but with higher IBU's.

I was alsways under the impression that Chimay's yeast strain was different from Wyeast 1214.  I've used 1214 twice and I wasn't too fond of it, but maybe it was my fermenting temp.

I luv a good Chimay red every once in a while ;D  I've never had a bad one, but i have another question.  Does Chimay still use their fermenting yeast for bottling?  I was thinking of making a starter from one.
