Looks great Tom. What temp did you smoke?  How was the tenderness?
It stayed between 225 and 250 the whole time, took it off when it hit 185.  It wasn't as tender as I'd hoped, but it was really good.  Next time I think I'll let it go a bit longer.  Man, I love corned beef - first time I had it smoked/grilled instead of just boiled.

I heard back then on these islands and some of the tall ships they served long pork.Any of you guys ever had that?
Funny.  Maybe you could get yourself some hufu.

I've tasted this a lot when judging homebrew, and always chalked it up to an over abundance of flavor hops that aren't balanced by the malt.  If there's another cause, I'd love to know what it is.  Maybe Gordon has an idea . . .

She brings them into the house, and since the last greenish batch was picked yesterday, they are already red today!
It;s always worked in the last, but the tomatoes never seem to taste as good if they ripen off the of the vine.It could just be bias though,  My wife's aunt swears by cutting off whole branches and putting them in a vase and letting the tomatoes ripen in the house that way.  We haven;t tried it yet, and YMMV.

Thanks blues, but the anemic harvest is really disappointing.  Seriously, one tiny zucchini?  Those things grow huge overnight!  It's ok though, it's all for fun - good thing we don't depend on it for food.  The leeks are still looking good, and I think we'll get one fig, so there's that.  I might have a greenhouse built in time for next summer, we'll see. :)

Ok, here's the ~8lb brisket - dry rubbed with corning spices, put in the fridge with weights, and flipped every day for 10 days.  Washed, patted dry, rubbed again with corning spices (salt free this time) and smoked today for  ~9 hours with Madrona wood.  It turned out great! :)

No worries, as you can see from the posts above, there are lots of ways of doing things.  None of them are the only correct solution, it's all about what works for you,  I imagine in Korea there are some challenges that those of us in the US never even consider, but I'd bet brewing makes you popular on base :).

This is the wrench that I use. The offsets are nice, it fits both sizes of posts, and did I mention it ratchets?! :)

I think the off-character that you don't particularly care for is most likely to grow in the bottle, so if you don't like it it could be a dumper.  On the other hand, if you dump it you'll never know.

I say bottle it - if it still sucks you can always dump it later (says the hoarder).

The posts themselves on the correct in and outputs would cause the CO2 and tap ball valves to fit properly?
They are slightly different sizes, so the gas post does not fit a liquid disconnect easily.  So the grey (gas) disconnect should fit the one with the cuts easily, and the black (liquid) disconnect should fit the smooth post easily.  If they're not fitting the proper post easily try keg lube or some oil as euge suggests.  I wouldn't use olive oil since it can go rancid over time, although it might not really matter.  But I've got a bottle of mineral oil I would use if not for the keg lube.  Btw, don't spring for fancy mineral oil sold for oiling your wooden kitchen utensils.  Buy the stuff that is labeled as a laxative (at least in the US).  It is the same stuff, but 1/3 the price.

By the way, how do you get those posts off your kegs?
I use what I call a keg wrench.  It's a Craftsmen ratcheting box wrench I got from Sears for ~$12.  11/16" on one end, 7/8" on the other.  Some of my kegs have smaller fittings, some larger, this one wrench fits both size fittings.  Plus, it ratchets!  I actually have two, after I lost one for a year when I moved.

I have some kegs where the rubber top comes up high enough that it is hard to get the wrench on - is that the thin area to which you're referring?  I use vice grips or robo-grips to get hose off, but I tend to get rid of them after a while.  I'm spoiled by my keg wrench.

As for bizarre fitting, no eyed deer.  Maybe with a pic the collective wisdom of the forums could figure it out. :)

Oh, I think I figured out what you mean euge.  The volume under the false bottom is not the same as the dead space when I drain my keggle, so yeah, accounting for losses to the boil due to dead space in the tun is a different calculation.  But for thickness, I subtract out what's under the false bottom.  Hope that makes sense.

Yeah, but adding a couple of pounds will thicken your mash.  If you're aiming for a certain thickness then you should ignore the volume under the false bottom IMO.  You just end up using less sparge water.  Again, I'm not saying it's right, just the way I do it.  :)

Ok, here's a pic - ignore that the one on the left is a 6-point nut, and the one on the right is a 12-point nut.  They come in both.  But notice that the one on the right has cuts in the corners of the nut, while the one on the left is smooth.  The one on the left is a liquid post, the one on the right is a gas post.

Cuts = gas.  Smooth = liquid.

My problem isn't necessarily the post connecting to the keg - it's that the ball valve won't connect to the post.

Sorry if I didn't explain this well.  The posts are interchangeable in that they will each fit on the keg in either position.  They are not interchangeable in that the liquid connector will not easily fit on the gas post if you have them switched.

Seriously, look for the cuts at the base where the wrench would grip, that will tell you which is the gas post and which is the liquid. I'll get you some pics so you can see what I'm talking about.

If you already know though, and have them on the right way, apologies.  Keg lube might help.

I ignore the volume under the false bottom when calculating mash thickness, then just add it to make up for it.  For example, if there's a gallon under the false bottom and you're mashing 20 lbs of grain at 1.2 qts/lb, that's 24 qts of water, or 6 gallons, plus 1 gallon from under the false bottom and so I use 7 gallons of water in the mash tun.

Not sure if it's the right thing to do exactly, but it works for me.
