Anyone got a tried and true recipe for Pad See Ew aka Pad Sew aka Pad Seuw?  Had a great version last weekend while judging the first round in Indianapolis at a little place called Siam Square.  They call it Pad Seuw there, but I've seen those other names too.

Beer Travel / Beer in SW Florida???

OK, whose leg do I have to hump to get a decent beer in Southwest Florida (Naples, to be precise)?  I looked in a few stores and can't find anything local.  I picked up some beer from a place called Key West that looked reasonable.  It was; Sunset Ale is an American Amber style ale, decent hops, nice caramel.  They made a witbier of sorts but it uses key lime instead of orange.  Nice twist.  It works.  Then I look at the fine print on the neck label and see that they're contract brewed by FX Matt in Utica, NY.  OK, it's a nice beer, but it's not from around here.  I'd like something fresh and local.  I'm getting ready to hop in the car and drive three hours to Jeffy's house for some homebrew.  Somebody throw me a life preserver, quick!

All Things Food / Big Green Egg

I was looking at BGEs the other day and couldn't decide between the large and the XL, which probably means that I'd like one in between.  And which also means I'll likely buy the bigger one.  Looks like I'll need 3 people to help me put it together, though.

I have a nice gas grill, but was looking to replace an old water smoker that died, plus be able to do charcoal cooking, wood-fired pizzas, and maybe some tandoori.  Can the BGE do all those things?  It seems like it has a lot of excellent features, but I was wondering how many different cooking techniques can be applied successfully on this beast.  Not just what's possible, but what is actually a good idea to do.

General Homebrew Discussion / Using Munich Malt

Personally, I think most people miss the point that it's *dark* Munich being used.  Big difference in flavor.  When I hear people who get their 100% light Munich malt bocks ripped for "needs more Munich malt", I always tell them to try some dark Munich in the mix.  Makes a big difference.  As does some CaraMunich, IMHO.

Beer Travel / Special PNW Beers

A friend of mine who lives in Seattle will be visiting me over Christmas.  He wanted to know what beers to bring me.  Actually, he asked for a list of all the beers I've tried so he could get me something not on the list.  After I stopped laughing at him, I suggested that he look for special releases and such.  But I thought I'd try another resource.

OK, if you were going to get me a mixed case of beer, what would you get me from the PNW?  We get Rogue and some of the bigger breweries but not a huge selection.

Ingredients / Galaxy hops

Can anyone get or has anyone used Galaxy hops in the US?  It's a popular new hop in Australia, with an interesting tropical fruit character.  Just didn't know if it was available here, or if it had the same character once it arrived. 

Aside from that, I found a lot of use of Cascade in AU.  Most good American pale ales I tried (commercial ones) used that hop.  It was very retro, but in a good way.

Beer Recipes / Award-winning Christmas Beer or Winter Warmer

BYO asked me to put together an article on Christmas Beers and Winter Warmers, and wants me to find four other people who have won awards for one of these beers. If you have an award-winning recipe or know of someone who does, please get in touch with me offline.  I'm basically looking for a recipe and a few of your thoughts on making the styles.  It's not a long article, so I don't need a lot of material.

I need the info by September 26th.
