Yeast and Fermentation / What to brew next

I just got these and was wondering if anyone had any ideas on some recipes. I think I'd like to do a "no-boil" for the Berliner Blend (ECY06). I'll most likely do a Saisson style with the Farmhouse Brett (ECY03). I am open to any and all suggestions.

A little vodka shouldn't be a problem. I've been using cheap vodka in my air locks for years with out issue. You should not use air lock activity as a sign of fermentation. 2 hours is not nearly enough time to determine if there is fermentation. I'd leave it for a day or two before even worrying.

If I remember correctly, all the default mash profiles are fly sparge, unless it actually says batch sparge.

My hydrometer (apparently) lost its calibration somehow. I know I checked it a year or two ago, and it was correct, but I checked it today in 60*F water and got 1.005. Do I just subtract 5 points off any measurement? Why/how would a hydrometer lose its calibration?

You use distilled water, correct?

11" height is pretty tight. Here in LA I started 2 years ago with Cascade, Nugget & Magnum. I use wooden planter boxes that are about 4'x4'x4'. I have a small page about my first year here http://titaniumbrewing.com/?page_id=163. The cascade has now busted the wooden box and I will have to plant them in the ground, also this year I am only doing Cascade because it seem to grew best out of the 5 varities I have tried for our climate. You may also want to consider that these plants will grow rather large, if they take off and an apartment balcony may not be enough room. You'd be surprised. I have had great luck with Cascade here in Los Angeles, 34 degrees North. My first year I harvested about 12 oz. off one plant, and last year it yielded about 2 pounds. The other varieties I have tried were failures, so this year i am going to do maybe 5 Casacde plants, with one being my 2 year old plant.

So I've getting into the juicy part of the book, "For the Love of hops", the recipes. I came a cross a recipe that simply perplexed me, New Zealand Pale Ale (page 248). For some reason I can't really figure out the grain bill.

75% Pale malt
10% Munich
8% Caramalt
2% Pale Crystal malt

Oh well, I probably won't get my hands on any Wai-ti this year anyways.
