bacon cupcakes

I made these this morning for the kiddos before school.  Thought I would share the goodness. 

fry up some bacon until mostly done


put the bacon in a ring in the cupcake pan


add an egg


cheese, broken up tater tots, some salsa


in the over for 15 minutes at 400

There is a cupcake shop in my town that does this. chocolate cupcakes with bacon in them and on top. people like them apparently. As a lifelong vegetarian I can say that the only reason I have ever wanted to try bacon was because everyone else seems so into it. Personally (sorry weaze, remember the brotherhood of the kilt) don't care for the smell. and what little bits I have tasted (accidentally) were not to my liking either. This is kind of strange as the nasty frozen fake soy bacon I actually like. go figure, I guess I just don't like pork.

They use those to bribe me at work. It works.

Wyeast flew many boxes of them into SD last summer for NHC and was giving them out in the hospitality suite.
