Belgian Dark strong.  First time I'm brewing this one so I'm excited.

Hmm, looks like adverse weather conditions may be delaying my delivery of supplies for this brew.  Might have to switch to another strong golden ale instead.

If my water thaws so I can brew I was going to brew something to pitch on a Nottingham yeast cake-I just saw hopfenundmalz's response and a smoked porter it will be.  The question is now whether I use home smoked malt or Weyermann.  I've got pecan and apple wood, I think the applewood may be too mild.

Corky, a good friend bought a bag of the Briess cherry wood smoked malt, I bought 15 pounds of that, and it was very fresh.  That is what is going into the smoked porter.  Some more is going into a Chacuterye type smoked beer, trying to do something like New Holland does.  I am done with my 3 pils cycle, now it might be 3 smoked beers.

Applewood works pretty well in a smoked porter, but I would go with the pecan.  The applewood is mild and what you expect.  The pecan would turn it up a notch.

Hopefully going to transfer and dry hop my IPA and wash the yeast in preperation for a barley wine. It's hard to stick to a schedule with an infant though.

You are quoting yourself....... does your therapist know about this?

Me, I can't keep up..... for the first time since November I am at risk of having to drink commercial beer in my own home.... Brewing 10 gallons of house APA tomorrow, then 4 days of UK. The current keg is at a little over 1/4  :o I need to just brew until I have a bunch of kegs in stock....gives 'em more time to settle down too.....

Nothing this weekend. Dry hopping an ipa and back sweetening a cider. Need to kill my keg of black ipa to free up the keg! Just the easy stuff! :)

At last year's NHC, there was a mead panel of some excellent mead makers. To a man they said if you follow a staggered nutrient addition schedule (take your total yeast nutrient addition, divide it by 8 - add 1 portion every morning and 1 every night for 4 days) you can have a mead up and drinkable in 3 months, no problem.

They then poured meads to prove the point.

Also, I would transfer at the end of a month anyway to get rid of sediment.

No brewing...hosting the 13th annual Domras Cup Mead-only competition at my home...for the 13th year in a row.

It's nice to have "leftovers" lying around for a few weeks!

On Sunday I will be brewing a Southern English Brown all grain.
