Title: OK, we DID it!

The TTB approved our Brewer's Notice today.  Now, we send that to state, and they issue the license.  And the state already issued a conditional approval with that Brewer's Notice being the only incomplete item.

Looks like we're done.  If any of you are in the Clallam County, Washington area, look for beer from Dungeness Brewing Company in Peaks, Barhop, or Bar9.  Certainly by Labor Day weekend.

Now on to the REAL questions..........

Of course all our friends (both brewing and non-brewing) have been quite supportive, as they've always gotten the fruits of our hobby.  Now, I'll be asking them to pay for that privilege, and I wonder if they REALLY like our beer, or they just liked the PRICE of our beer.  LOL.

When we first got started I called on my friends to PACK places when we had events or launched a new beer or had a tap take over. Once we hit a pizza place so hard that we had a line waiting out side to get in and 20+ people sitting at one large table and every table packed (the owner of the restaurant immediately put another permanent tap on for us after that and personally shook my hand, we made him a s*** load of money that night.) Now I don't need to call on friends, we are having a beer dinner at a local "fancy" restaurant next Thursday and it has sold out on its own, but in the beginning friends really helped to make a statement - and our beer is usually one of the most expensive on the menu and they still bought it and I never heard a complaint (well, not much).

Thanks Dude.  I'm certainly going to get all my friends, co-workers, and everyone else I know to go buy my beer.  My friendships and reputation will sell the first keg.  Sales of the first will sell the second.  We brewed another batch of my basic IPA recipe last night, and that will be our first commercial sale.  Both Corny's are already sold.  You know I'm only doing ten gallon batches  (try not to laugh too hard, LOL)

Although, we are going to try to pour at the Strange Brewfest this coming January.  Maybe that Jalaepno IPA, or such.......

I think it's awesome that you're doing a pico brewery. Interesting and I bet the initial outlay is quite small compared to something significantly larger!

"quite small" indeed.  The only real costs have been a couple more chest freezers from craigslist, $100 liciense application fee, and $100 for the brewer's bond.  Even product liability insurance is cheap. 

We're in to this for less than $2000 when including everything. 

But of course, "pico" is a good word.

I was wondering about that. What is your brew schedule and ultimate capacity? Besides 10 gallons at a whack.

Probably 20-30 gallons a week.  We're not trying get rich or even quit our day jobs.  Just a little side business, doing what we love doing. As a homebrew, I've often reached my storage capacity and have to give away beer to make room so I can brew more.  Now, (hopefully) we can sell that beer.  Of course paying federal and state tax on beer I drink myself will be a PITA, but, oh well.

Just send them a keg, and give us a week notice of the exact time they put it on tap to the second. Malt and Vine sells out of specialty stuff in no time flat.

Our specialist review was due on 7/14 and nothing happened. I finally called today to see what is up. It seems processing times really vary wildly by region.

Our "specialist review" was due 6/16.  We got final TTB approval on 7/19.

I left another message today with the help line.

In conjunction with the Brewer's Association's earlier announcement about the HUGE amount of new breweries in planning, the TTB told me today that they have been absolutely slammed with applications. They are saying it is taking 90+ calendar days to process an online application now. Guess I should have submitted earlier! Oh well, plenty of buildout to finish at our location in the meantime.

I got alot of "I don't know why this hasn't gone through; Really!.I don't know why this didn't go through."

Watch what is posted on your PONL account, I think alot of what happens is because of what is on there. where had correction requested since June 23 and it never disappeared until we got out permit. the correction was recieved on June 25, go figure.

My experience shows you should do your diligence. You are alone in making it happen.

Hey, congrats you guys! Opening a brewery was one of the most kick ass things I ever did. 2 years in and still f'ing love it. It's the people, obviously, not the money. But the people are so awesome. And beer is just a lot of fun. Best wishes! You will not regret it!
