Title: What was the best homebrew beer you ever made?

Hello all!

Before I get into a bit of a story here. I want to know: What was the best homebrew beer you have ever made and why!?

I have brewed approximately 40 batch of homebrew and I am on a quest to replicate the best homebrew I ever made. I think mine has a lot to do with personal taste but it was Patersbier all grain kit from NB. This is funny because I dont really care for belgians. But this beer didnt have that phenolic flavor.

I just finished my brew day and this will be the 4th time I've brewed it. The first time it was awesome (the best) except not all the bottles carbed up. Second time it was way too Belgiany, third time I tried using US-05 and it was less flavorful than a Coors Light. I am a little worried this time around because my yeast packs were pretty old (May) so I made a starter, but didnt see any activity in it before I pitched. (I brew 2.5g batches so I dont usually make a starter).

The best beer I ever made was a honey pilsner. It was a total PITA since it was my first time lagering. (Not an easy feat in AZ) But, it turned out great! I will try again this January. I am celebrating my first year of home brewing this Christmas, so hopefully many more great beers in my future.

Good luck with this next go around! What type of yeast did you use this go around?

I'm still at the point where I'm mainly experimenting with recipe ideas and haven't gotten around to trying to really nail down a perfect version of any of them yet. With that said, I think my best brew yet was my Hoptoberfest that I brewed this summer. It's basically the grain bill from Jamil's Ofest recipe in BCS, but loaded with late and dry hops. I was really happy with how well the lager yeast worked in such a hoppy beer. I will definitely be exploring some hopped-up lagers this winter.

I'll drink to that! That's what keeps me so excited about this hobby.

For me it's the last one(most of the time).  The next one will be a little better.
The porter I'm drinking right now is pretty damn fantastic, the rye stout I have in the fermentor tasted excellent when I took a sample, and the Belgian strong dark ale I brewed 18 months ago and is sitting in a keg in the garages should be amazing by now.  They are all my children and I love them equally for their different talents and shortcomings.

I'm not sure how to gauge the "best"...I had a Weihenstaphener style lager this summer that went in less than 2 hours for a 5 gallon keg with about 8 people drinking, so that was probably my most "popular".  The best may have been Denny's Rye IPA - it didn't go as quickly, but it sure got a lot of compliments.

By the way, Thanks, Denny!  Keep up the good work and legacy.  Between you and Jamil and Gordon, I really don't have to think much on the recipe front and I can just keep dialing in the system....

My best was an extract Happy Holiday Brew kit from Midwest Supplies. I made it 2 years ago on a horrible windy and cold day. My wife and I huddled around my propane burner on a tiny patch of sidewalk on the North side of my house. My wife usually doesn't sit through an entire brew session, but she was a trooper. We had a great time talking and hoping we wouldn't run out of propane. We finished the brew with only about a pound in the tank. The beer wasn't the best tasting I've ever made, but it was the best experience. I still have 10 bottles left of that beer and so far they're still very good. It's not always about the final product, but how you get there.

I can honestly say most of the time the best brew I ever made is the last one I brewed.

mine has to be a doppelbock that i triple decocted. i found a bottle tucked away that i had forgot about . it was about a year old and i would put it up against any commercial dopelbock. but damn its all gone now.

5 gallons of american barleywine, extract and grains, from AHS.  i havent tried to duplicate with all grain yet.  i was such a good aroma and taste.  drank my last bottle last year.  best beer i made/created recipe was a belgian trippel.  dont keep good notes so i cant tell you exactly why but it still sticks out in my mind.

I made am Imperial Oatmeal Stout with Icelandic grains... And wow, what flavor! Unfortunately, the trip to the Iceland HBS is just a little out of range...

Wow guys,

These are great replies. I find it interesting that the best beers seem to be the biggest/aged.

I just tapped the keg of O'flanagain's stout I brewed. Its good, but I think it will become better with some age. Also, my Patersbier has yet to take off... I know it hasent been that long, but I would rather have a shorter lag phase. Well see!

That used to be the way I thought, my strong Belgian is the first strong beer I've brewed in the past 3 or 4 years.  Most of my best beers are moderate ABV and ready to drink a week after hitting the keg.  It is nice to have a selection but I'm not the kind of person who likes brewing beers I can't drink for a year.

I have been brewing for, hmmmm....lot's of years. My husband just brewed his 1st batch after being dragged to many club meetings and NHC. Guess he finally decided it would be helpful to be conversant rather than just pretend he knew what people were talking about. The beer was an experimental recipe I made up for him. Very simple, very pale ale just to test the Belma hop. The beer was very so, so.  He was sooooo excited. Even though he has an excellent palate..... for quite a while it was the best beer in the world to him!

The best beer I've ever made is my vanilla porter. I make it for my wife. It makes her smile. Best beer ever!

A Barleywine. Or maybe some of the Pilsners or Helles biers. The Ordinary Bitter we are just about drinking was right up there.

But for a good story, the best beer I ever made was the barleywine I made for my wedding. I had just started brewing. Looking at my notes it was batch #6!! It was way too young, hot and boozy, at the wedding, but I instructed all the groomsmen (each got a 4 pack) that they had to age them and only drink one per year. I kept a 6-pack and my wife and I drank one on or near our anniversary. We missed a year or two. They last one was drank on our 10th anniversary! It was delicious- darker, sherry-like. Awesome.

What was cool also was that I brewed it on one of my groomsmens' birthday (November) and bottled it on another one's birthday (February). The wedding was in September.

one of the best beers I ever brewed was a maibock that I overnight mashed in my oven with loads of carapils. It was the best maibock I ever made (and I have made some good one's IMO) but I've always been chicken to make it again for some crazy reason.

There is a lot of truth to that.  I put a lot of effort into researching the next style and how to make it the best beer ever.  It doesn't always work out, but the hope and anticipation is always there.
My wife says the recent Scottish 80/- is the best beer I ever made, but I think I've done better with a Dortmunder Export.  In over 20 years of entering competitions I have only had 2 best of show beers.  One was a Rauchbier and the other was a Berliner Weisse.  The rauch was judged so by the guy who wrote the book on smoked beers, so I'm pretty happy with that.

The best beer I've ever brewed was a batch of my None More Black IPA nearly two years ago. It was the first batch of 2011.  Just had something about it that I haven't quite been able to duplicate; I'm pretty close, but not quite.

I'm definitely not one of those who feels it was the next one or the last one I brewed. I'm waaaaay too picky with my beer. It has to be what I'm wanting for it to be good. My palate changes too much, I think.

I should also say that I'm way more critical of my beer than I'd like to be. Seems like a lot of you guys like your beer no matter what flaws it may have. For me, if it is anything short of super tasty, I get down on myself. I need to lay off that a little, I think. I get caught up in trying to create beer that is as good as the stuff I can buy in the stores. I think it should be. But when it's not, I start questioning myself, second guessing my ability, it's upsetting.

All kidding aside, it would have to be the Barley Wine that I made 2 years ago.  It won a 1st place and came in second in Best of Show.  I still have one bomber left that I plan on enjoying over the holidays.

My best batch so far was actually my last extract/partial mash batch.  It was a willamette/cascade IPA (http://alcaponejunior.wordpress.com/2012/08/31/willamette-cascade-india-pale-ale/).  Honestly, I don't know what I was thinking with that hops schedule!  But it came out great, so...  8)

Hopefully this "best ever" record will soon be shattered by my all grain setup though.  I'm on batch 5 of AG, about to brew batch 6, and I've got great fermentation temperature control now.  Although to be honest, the closet at my old place where my current "record" best beer was fermented was a steady 68F.

At the moment, my favorite batch was the first batch of Jamil's Evil Twin.  Although, I have a sneaking suspicion that Denny's BVIP is going to bump JET to second.

I can think of two that turned out EXACTLY how I wanted: a NB kit for a Tripel Karmelite I brewed back in 2010 and my lambics (well, except the 2011 one).

I'm pretty harsh on my own brewing - but I'm always striving for better on the next batch.

I think there's a lot of us like that.  I know I'm harsh on a lot of my beers.  I think that since I know what I wanted it to be, even if it's good but I missed the mark I'm disappointed with it.  I get lots of compliments and I have to not dog my own beer so much.  I think it's the whole relax, don't worry thing.

Best beer I've ever made?  I don't know.  Probably the tripel for my son's Christening.  Or maybe the strong golden for his 1st birthday.  They were both great.

Beer brewed exactly to my mind's taste (exactly as it should be): 2011 Marzen
Better than I ever imagined it would be: 2010 Festivus Ale (Old Ale aged in oak, using liberal amounts of Special B, 1st and only time brewed)
Fan Favorites: 2011 and 2012 What?...er...melon Wheat?.

I don't think my own answer to this question is the same of that of the people that drink my beers.  I can create a great, great beer, that everyone loves, but I know that I missed the mark I was aiming for.  This was the case for a Kolsch from 2011.  So, my friends would say that Kolsch or my robust porter, and I would probably say a batch of German Pilsner from February.  As it faded I finally was willing to part with a couple bottles and gave it a shot at 9 months of age in a competition.  Still managed 41 and HM.

At a certain point, I know it is good, and a piece of medal is just going to annoy me for years as representing a couple bottles I could have enjoyed.   ;D

A close second would be an experimental batch that opened my eyes to the Belgian Pale Ale style.

It was spring 2008. I made a Blonde ale which is my regular house ale. Nothing I did was special, but I did forget to turn on the fermentation chamber. The next morning I checked it and the temp was 74F. Nottingham yeast. I crash cooled it and got it down to 68F in an hour or so. The beer turned out great, at least for a Blonde Ale. I have never repeated it since then.

I have friends that say our American Barleywine is the best beer we've made.  My brother vacillates between recent batches of Strong Scotch Ale and Russian Imperial Stout.  My wife says it was a Dunkelweizen we made a year or so ago.  In terms of recognition, our American Brown Ale (Bucksnort) would be considered the best beer we have ever made.   I can't decide it’s like picking which of your kids is better.   

My hope is that the best beer we have ever made is in one the numerous carboys scattered throughout my home.  I will be shocked if it is the Standard American Lager we made a week or so ago, but I sure hope it is! ;D

I don't know,I would have to do a side by side! 90% of my beers are really good in my opinion and the other 10% are just good.

I'd have to say that my favorite all time is my BumFishDick 75 Minute IPA. I love the flavor of Dogfish Head's 90 minute and love the drinkability of Dogfish Head's 60 minute. So I found both recipes and kind of took the best of both to give me exactly what I was looking for in a beer at around 7.5%. I gotta make that one agin, it's been too long.

Well just to update this. My attempt at recreating my best beer failed. Unfortunately I think the yeast was old and stressed and it put out too many Belgian esters. Making taste like a Belgian. I bought the ingredients to try again! this time with fresh yeast.
