Title: Favorite beer you've ever brewed?
Post by: hellbound on March 22, 2013, 06:22:14 pm
So what's the favorite beer you've ever brewed? Just curious is all really.

Mine is an Arrogant Bastard clone that I put together myself, after brewing it over a dozen times, it's spot on. Reason it's my favorite, it's the very first beer that got me into real beer in the first place. And the idea of being able to brew it myself? well, that's why I started brewing.

Cheers Brewheads!

It was probably my tart cherry stout. It was my second all grain brew. My first was my attempts to clone SNPA. That beer didn't clone it, but it was still pretty good. But that was a simple recipe. I decided to jump into something that was much more complicated. I questioned myself if I should brew it or not. I put the recipe together. It involved cold steeping of dark grains and racking the beer onto 10 pounds of fresh tart cherries. This was last July....The beer was very cherry-y at first. After some aging, it is now pretty damn good IMO. Good enough that I registered it into the NHC. So, I guess I'll see how good it actually is  8)

My rye pale ale that is almost gone. It was also my first beer that was kegged or dry-hoped and the first beer of mine that I kept for myself and didn't share with very many people.

The American brown ale I brewed last year.  Big hop flavor and aroma with a nice malty backbone and just a hint of roasty chocolate in the finish.

My dry-hopped Ofest that I brewed last year. It was my first lager and it just nailed the combo of hop aroma, malty richness and a nice lager yeast note.

I'm forever chasing a series of bitters made back in 2007 that tasted exactly like ruby-red grapefruit juice. Amber color and hopped with columbus and cascade. I could do no wrong and made this beer all summer long. Ever since then I can only get hints of grapefruit in my beer.

This like asking me which is my favorite kid....;)

That said, on two sides of the spectrum, there were a couple all FWH kolches I brewed that were so outstanding I was sorry it was only 10 gallons. And my IIPA recipe is a favorite of mine as well.

There was also a cherry, cinnamon dubble I made for Christmas aged on toasted cherry wood several years ago that was really amazing to me and it was one beer that really aged out nicely 2 years later. It all went into champagne bottles and I was really sorry when I opened the last one that is was the last one. One thing I had done with that batch was make my own cinnamon candy sugar. I'm not sure how much pf the cinnamon remained in the beer but it was fun and tasted really good before going in beer.

I make a double decocted OFest every year for our Mountain Party which seems to get better every year.  But I'd say my Steam Beer is about perfected.  Hmm, but so is my Pilsner Urquell and Guiness clone.  I'm with Keith, too hard of a question!   :)

A Pliny clone I brewed a few years ago.  I could never get that great blend of hop flavor and aroma again.

So far - in terms of drinking, it's been some of the simple beers that surprise me at how good they taste.  I guess if I had to pick one it would be a Bo Pils that had a really nice malty backbone and finished wonderfully crisp.  Simple batch sparge and grain bill, too. "Did you really make that?" - I was asked.

Now, I have enjoyed brewing the Denny beers, Jamil's beers, Stan Hieronymus' beers, Ken Lenard's beers, Fred Bonjour's beers, ....(too many to name and thank!)

The last batch  ;)

I have people ask me to redo two every time I see them. One was a red ale, dry hopped with oak. The second is a Nut Brown. Can't keep that one around for long.

I was just tasting a variation of Denny's Vanilla Bourbon Porter that we have oaked using charred bourbon barrels.  So far, this is my favorite!  It's the first beer I've made that I am decidedly not sharing openly.  Does that make me a bad person?

I also have a Blueberry Wheat that is my first beer, and still a go-to recipe for fun drinkability.

Sorry, but you are headed straight to hell, so I will help prevent that - you can send me a few bottles ;)

I'm going to say my attempted clone of Big Swell IPA from Maui brewing. It was among my first batches of homebrew and even though it was a little too dark (got kinda overzealous with the crystal malt), it was still incredible! Also coincided with my buying a keg/tap system and it was in the middle of summer so I associate it with some fond memories.

A wise man once told me that the beat beer in the world was the one in front of him. Perfect. But surely you have a favorite? Or are there just too many to count?

It's boring and obvious, but it would have to be my Rye IPA.

The most asked for brew on my taps - I'm presently out of stock and it may get brewed today!

It's a good one for sure. Only brewed it once. Loved it. How long did it take you to refine it to where you wanted it?

Tough to say, but one of the funnest brewing experiences I've had was a couple weeks ago. I woke up to a blanket of fresh snow and a message saying that the office was closed. So, I decided to brew. I didn't use a recipe, just went by feel and experience and some guessing. It went incredibly well and was a lot of fun. "A little of this, a little of that!" I bottled it yesterday and I think it's going to be a damn good, refreshing session ale (1.039 OG, IBU's in the 50's).

The best beer I ever brewed was the all grain Patersbier kit from NB. I dont care for belgain beers but this one did not have any of the phenolics that I usually get. I have rebrewed this kit 4 times and it has never been anything close (always belgainy) I wonder if somehow the yeast packaging got messed up. I tried it one time with US05 but that turned out so clean it was like water.

Look to your yeast health proper ferm temp (65 or so) and proper yeast pitching quantities (not too much, not to little) will help you control those phenolics and esters.

12-15 batches to hone the recipe and make sure it was repeatable.

Sometimes the boring and obvious are the best, boring being subjective. Like I said, there was a kolsch I was brewing for a while that I was just amazed by. I really nailed it. It's not something I would want to sit down and drink everyday but I was highly impressed by it and managed to nail the simplicity of the beer.

Need to brew that one again. Wife's b'day is coming up.

A German Pilsner in 2010 that was darned near perfect.
Based on my taste test this weekend, this might be my answer.  we'll see what the NHC judges say in a few weeks.   8)

otherwise, a few batches of my robust porter or the "what the funk is that smell?" guava perry with french saison yeast I made last summer would be high on the list.  And just about every IPA I've ever made.

cheers--

I think my first all-grain batch was my favorite, a wedding beer for my best friends. I was paranoid, anxious and scared. I measured and re-measured all of the ingredients, studied and re-studied the recipe and formulas from Denny's site and in the end it all went perfectly and the beer turned out fantastic.

Gotta be my IIPA I brewed last winter. Did a triangle tasting with Double Trouble and Hopslam and couldn't decide which I liked better.
