OK...I suppose I should have posted this here.

"Redbeerman and myself are brewing up Denny's famous Vanilla Bourbon Porter on Saturday. This will be the first time making that beer. With all the rumplings about that beer, we thought it would be a good one to try."

I filled my last two carboys last weekend at "TAFTH" last weekend.  So this weekend I'll probably bottle some wine and free up three or four carboys so I can start some lagers for this year.  :)

Nothing so far, too busy smoking grain while the weather is still nice.
4 lbs smoked with pear wood.  Delicatesweet smoke.
4 lbs on the smoker with Beechwood.  I want that complete Bamberg flavor experience for my next Rauchbier.  Will do 4 more lbs so that I have enough.

Maybe an IPA later in the week.

Never smoked grain before.  Making a Smoked Porter sometime soon & will smoke myself.  Plan to use Alder.  What's your process for smoking grain?  Maybe a new post???  Thanks!!!

4 lbs works well on my smoker. Wet with 1 cup filtered water, no chlorine wanted here.  Spread grains on a screen.

Soak the wood before hand.  Smoke low temp, you want the wood to smolder, no flames.  Have a spray bottle handy to put out any flames. Turn the grain so that the smoke can get evenly to the husks. I go for about 2 hours.

When done, spread on a cookie sheet(s), put in the oven at lowest stting to drive off phenolics for one hour.  Your house will stink.  Then put in a paper bag for a week or 2 until you are ready to brew.

Have done alder twice, and apple.  Expeimenting with others, as you can see.

I finally got around to brewing  Ryan's Ruination clone (http://forum.northernbrewer.com/viewtopic.php?f=4&t=71443).  I'm looking forward to seeing the results with the WLP007... I love 001 in IPAs but it was time to try something new.

I'm also cleaning bottles to cork my Flanders Red.  It's been about 18 months since I brewed it, and I've really been in no hurry to bottle since it keeps improving, but at this point I think there's enough acetic acid for my tastes so I might as well go ahead and do it.

I'm brewing 10-gallons of imperial porter to split into two batches.  One will be Denny's BVIP, and the other will be the "base" porter without the vanilla or bourbon.  I did this last year and both beers turned out great.  If you haven't tried the BVIP recipe, you're missing a good one.  Thanks Denny!

Last Saturday I brewed an IPA in the 60IBU range, 1.061, all cascades except for half the bittering hops (HopShot), to be dry hopped with leaf cascade.

Next weekend on the yeast cake, I'm thinking a bigger DIPA, packed to the brim with Chinook hops, and some Cascade.

I'm diving into an Imperial IPA based upon the Gordon clone that Jamil and Mike McDole detailed on a recent "Can You Brew It" podcast.

Here's the planned log: http://brewlog.zkdigital.com/index.php?page=brewBlogDetail&&filter=geoff&id=169

Pitching it straight atop the yeast cake my Pale American Whiteboy is currently sitting on.

Now, if the weather will cooperate and not be snowing too much, I'll be good.

Just hacked apart an old side by side fridge to get the freezer side at ~40F for serving (4 cornys worth of space but only one tap so far), and the fridge side at ~48F for lagers. Starting basic with an American Pilsener from Classic Styles. Also made my first starter to get up to a proper cell count. :)

Primary: NB Saison d'Ete All grain. Brewed on Veteran's Day in honor of my fallen comrades in Viet Nam ('69)
Secondary: NB Denny's Wry Smile Rye IPA All-grain. (my second all grain)
Raspberry American Wheat ale. Should have been bottled a week ago. Oh, well. . .
Conditioning: NB Denny's Waldo Lake Amber Ale. Tasted 2 weeks yesterday. It's good. (my first all grain)
Drinking: Saison - a disaster of a secondary with WLP 565. I will NEVER use this strain again. Borderline - dump it out. Even went to the extreme of corking in Belgian-style 750 mL bottles!

Brewed a Red Ale with all Willamette hops and a Schwarzbier on Sunday.  Both came out below target OG.  Red was supposed to be 1.046 for six gallons, got six gallons, OG was 1.041.  Black was supposed to be 1.051 for six gallons, got 1.039, 5.5 gallons.  I'm going back to fly-sparging.  Only seemed to lose 1 or 2 points at the most doing it that way.  Either I don't know what I'm doing batch sparging, or my manifold and 48 QT cooler isn't cutting it.
