I used them in a Dark Sour. I pitted them and added them in the secondary. It added a nice, rich, fruity sweetness to this beer. So, I would add them after primary fermentation is complete. They will kick fermentation up again, but I think this way will retain the most flavor from the dates.(https://uploads.tapatalk-cdn.com/20180613/88911bfc7c11c1349f7f1c80708ef2b6.jpg)

I'd do the same thing I do for figs...when primary is done, get out your wok and superheat it.  I use my brewing burner.  Toss the dates in a caramelize them.  Deglaze with some of the beer from primary and add the whole thing to a secondary.
