Thanks for all that info and perspective on brewing with newer (or older) malts.  I've bought myself a few bags of local malt; your guests gave me some perspective on how I might need to experiment with it as it didn't come with any analysis.  Good stuff!

I liked the podcast also the information was very informative! I am planning on trying Crisp Chevallier Heritage Malt as soon as I have room in my fermentation chamber.
