I think you should talk to us about the honey pacifica avacado honey. Great company, I like their honey but I haven't had the chance to use avacado honey yet. cheers, j

And I tell you what - that's the cold packed raw honey (aka no heat, minimally filtered) and man it ain't cheap. That 3 lb jar cost $18!
It's also dark and tastes / smells like molasses.

Man do I wish I could make it. I just finished up a braggot made with their orange blossom honey (same price) :o but WOW was I impressed with the quality of their honey. I've created a couple mead recipes that would involve either the avocado or buckwheat honey blended with a lighter honey; I just haven't had the time to make them. Ok, I'll wait till after the conference but then we should discuss this subject again. cheers, j

The thing turned out awesome. The honey is deep, rich, redolent of molasses. It's strange to sit there and try it and have to remember that this is honey, not molasses. I added it at knockout and let it whirlpool for 10 minutes to minimize aromatic loss while maximizing safety!

No! No more waiting! ;D Nice, I like it. That's quite the spice addition, I would have liked to taste that one, out of curiosity. Any other notes from the honey along with the taste of molasses or...? Sounds like it might be overwhelming in a braggot setting. Any future plans to use it again? Thanks for sharing. cheers, j

Drew poured me a sample of that recipe on Club night at NHC...and I have to admit, I was skeptical at first which isn't normally like me, but that beer was awesome.
