Title: Help me decide
Post by: tschmidlin on May 19, 2011, 05:32:18 PM
I'm having a family free weekend - I thought it was just going to be Saturday AM to Sunday lunch, but it turns out it is going to be more like Friday AM (I might have to take the afternoon off :) ) until maybe as late as Sunday dinner.

What should I brew?

I'm definitely brewing a Weizen on Friday and a hoppy red beer on Saturday (Rapture Red).  Those are set.

I really need to brew some Flanders and get that going again.  I have a RIS recipe sitting around that should get brewed at some point, but I think I might put it off further.  I'm open to other suggestions.  morticaixavier had some ideas for rapture themed ingredients (http://www.homebrewersassociation.org/forum/index.php?topic=7324.msg93098#msg93098) that might be good in the right style, but nothing is grabbing me.

I have a variety of malt and hops on hand, but there is a well stocked LHBS 20 minutes away and three more within 45 minutes.

What ideas have you got?  What else should I brew?

How about a lager of some sort. Maybe a Bock or an Ofest.

Slowly. ;D

I rarely get entire weekends to do whatever I want, and you want me to spend it working?

Hmmm, interesting ideas.  Those aren't sounding great, I think I'm in the mood for something quicker.  But maybe a schwarzbier.

kolsch? patersbier?
Good possibilities there, maybe the kolsch over the patersbier for now.

Lime saison.  Add a flanders aspect to it and put some bugs on it around 1.015-1.020.  And if you really want to get crazy, put some cherries in.  Sour cherry limeade.  Mmmm

what about a small brown/mild?  that way you can have something with a bit of roasty toasty flavor when you don't want clove/wheat or hoppy flavors.

It's not my favorite style, but just because he's being a wiseass that's going on the top of the list.  :)

So many good ideas here, thank guys. I usually have a long list of beers to brew, but I'm not always in the mood to brew/drink all of the styles on the list.

Witbier is on my short list for summer, and maybe a saison.  Those are nice summer beers.  I always advocate for best bitter as well, I alternate between that and APA as my go-to house brew.

With a vyzsen and a Red I'd brew a Stout or Porter just to have the full spectrum.

how about a ubber traditional Pls with no hops just a variety of psycogenic and stimulant herbs. Probably not all that easy to come by wormwood and valerian root on short notice though.

I am obsessed with steam beer at the moment as I am brewing a big batch for a wedding this summer and I started thinking about a sour cherry steam beer. like an anchor steam but when primary is over or almost over add brett and cherries. Up it WA you could probably find sour pie cherries easier than I can here in NorCal. Or rainier cherries might be good too with that loevely vanilla hint they have. mmmm. rainier cherries

Definitely something rapture themed. You know it's this Saturday, right?
http://judgementday2011.com/

Whatever the style, you gotta give it a rapture-based name. End Times Barley Wine? Purgatory Pilsner? Armageddon Red(den)?

A no sparge Barleywine and then a mild or a bitter to follow from the second runnings.  ;)

Yes.  I pulled a tokayer yeast out of the freezer last week, it's on a plate in my fridge.  I need to grow up enough to make a batch, it's not ready to go yet.  I know, it's taking forever.  But a friend sent me the Falconer's Flight and I want to use them, I need to keg my Flanders so I can send it to someone plus I want to put something back in the carboy with Vinnie's bugs, and I need to brew the weizen for SWMBO.

Ouch!  I forgot it was there, what is there, 3 lbs?  You smoked it, what do you think I should use it in?

I like it.  Maybe I'll do 10 gallons of the red I planned, and in 5 I'll add some more color and roast from steeping grains.  I'll have to work on the recipes.

Great idea, but for later in the summer I think.  I'm craving a variety of sessionable beers.  Although if I decide to get crazy this will be perfect for Sunday. ;D

Hmm... after careful consideration, I like blatz' idea of this "smoked porter"....  ;)

Smoked porter it is then.  But maybe not this weekend.

Well, just get it done while I'm still around...  I think I'm gonna head out now and pick up some stuff for a weizen of my own... and going through my grain inventory looks like I have stuff to make something Belgian or something English... And since I have a tupelo honey tripel conditioning, and an orval and belgian dark strong fermentating, I think something English will do nicely....  I have a 100% rauchmalt rauchbier in the keg right now that you'd probably like.

Bring some by, I'll be brewing all weekend.  We can compare to my 100% rauch malt helles dopplebock.  I need to keg that too . . .

Already?  I thought the Flanders was for today.  How many beers you brewing this weekend?

Plans change. :)  I'm brewing 10 gallons of Rapture Red now, but I'm going to add sinamar to 5 gallons and have a CDA.  I was thinking of doing another 5 of something today, but a guy came over to buy kegs and we talked beer for a long time so I'm running behind.  Then amish electrician is coming by in an hour or two, and my neighbor wants to have beers tonight.  So I think just the 10 gallons today.

I was also thinking of brewing again tomorrow, but I have 20 gallons of stuff to keg and need to do some house/yard work before the family gets home, so that might be it.  Oh well, not as much as I wanted to do but it's better than not brewing. :)
