Pizza in a wood-fired oven, hardwood floors, wood –aged beer: Let’s face it, everything is better when wood is involved. Wood-aged beer, in particular, is a term that has been thrown around a lot lately in advertising. While it is surely not a new concept, it does appear to be experiencing a resurgence. For years, measures have been taken to protect the wood from the barrel from influencing the flavor of the beer, but now more and more brewers are actually trying to get that wood flavor into their brew.

I have a chocolate stout recipe that I make once a year around this time and I used to use cocoa nibs to get a bit more chocolate flavor.  I have experimented with soaking the nibs in vodka and I felt that any more than 4-5 days results in some astringency when added to the beer.  This would fade over 1-2 months but still not a great effect.  This year I adjusted the grain bill and was able to omit the nibs altogether and still get the desired chocolate aroma and flavor without the cocoa.

One other tip: if you use the cocoa tincture, stick it in the freezer for a few hours and skim off any fat that may come out of the nibs to help with head retention.

I was wondering if there was a beer that tastes like cream soda I heard there was. If so, is it cream of ale. Is cream ale or cream of ale good? If so what brand.

The pH of fermenting beer drops very rapidly once fermentation begins, usually getting close to its final value after 24 h. In general, ales have a slightly lower pH than lagers; typical values for ale are 4.0-4.5, for lager 4.4-4.7. Each yeast strain, however, has its own characteristics. If you usually work with only a few strains of yeast, you may want to check the pH of your fermented beers to get an idea of what your yeast is giving you. If the pH goes up or down over successive batches, it may be a symptom of contamination and a signal to go to a fresh yeast culture. This can be especially valuable because you may not notice a gradual change in your beer, especially if it is slow and not terribly obnoxious in character.

Peel of a medium lime
1/3 cup fresh strained lime juice
1/2 cup sugar
3 3/4 cups boiling water
1 tsp. active dry yeast
1/4 cup lukewarm water (110-115F)

 I really like Dark Horse Crooked Tree India Pale Ale. Really I just like all IPAs. I'm also a big fan of most beers made by Rogue, especially the Mocha Porter.
