gmac, I brewed 17gal of German pils in my Brewhemoth a couple months ago, then followed that up with the doppelbock.  My pils was only 1.046, right where I wanted it.

One other thing  I did was to finally plumb my 100qt cooler mashtun.  The Coleman Xtreme was too thick for a plain valve and kettle screen so I had to improvise with some Home Depot parts.  Worked, no leaks either.  Now I can brew 15gal batches with impunity.

I transferred two kegs of German pils off gelatin, looked nice and clear in the transfer hose.  The true test will come when I chill it down.

Then I kegged 10gal of doppelbock.  I tasted it and its right where I want it to be.  OG was 1.075 down to FG 1.020 with WLP833.  Very rich malt character but not harsh with just enough sweetness to balance, and the color is spot on.  I used a crazy amount of melanoidin malt, about 5%.  I kegged with gelatin and will transfer them off next week.

After I got these done, I cleaned up the Brewhemoth and have it ready for my next brew, a blonde that I'm going to split to keg some with strawberry flavoring.

I wouldn't enter a beer that had only two weeks to bottle condition.

I prety much brew original recipes if only because I have a devil of a time following directions/recipes.  If you happen to feel bad about brewing a published/well known reciupe, change it up a little and make it your own.

Interesting to think a yeast strain might adapt to water quality.  I wonder if this persists once someone at White Labs takes it, cultures it for many generations over several years with their own water profile, and then sells it.  Seeing as this is a fairly new topic of discussion, I don't suppose the yeast companies have been adjusting water to match the profile from the location where the yeast was originally procured?

Martin, you say malt provides 100ppm Ca to a wort, is that at 1qt/lb?  2qt/lb?  The malt is going to have a certain amount of salt and some of that will be dissolved (not all since calcium salts tend to be poorly soluble), but the concentration is dependent on the mash ratio.  I also wonder what the variation in calcium content is in different malt varieties, grown in different soils, etc.

I ordered a sack of pils and a sack of Munich, they should be here end of next week.  I paid $45 per sack which is cheaper than the domestic Briess malt my LHBS carries.

I want to hear your results on that bock Euge.  I have a 2gal WLP833 starter going now and want to make a bock with it.  I may make a helles with it first and then pitch the bock on that yeast cake.  This is for 11gal batches.

Honestly unless they really jump out at you, you could enter it as an oatmeal stout.  You get a lot of coffee and chocolate notes in these anyway.

I don't necessarily mean oxidation of hops although this is a possibility, different hops have different storage characteristics.  Saaz is listed as fair.

Brewing in a bucket means your beer can get exposed to some oxygen.  This is going to show up more in a light delicate beer like a pils where there are no bold flavors to cover the flaws.  The lack of pigments means there are fewer anti-oxidants to scavenge up dissolved O2.

I'm not saying this is definitely why you are having trouble.  Obviously before you were happy with the beer.  I'm just throwing out there that you might focus on all aspects of the process, not just water.  Water is being more discussed in these forums and I think to some degree we are over-focusing on it when it comes to solving problems.  I'd check freshness of hops and malt, and make sure your process is sound.  I'd do it all at once, including an assessment of water.  I've found that you have a much better chance of improving a process if you redouble efforts on several fronts.  Yes it prevents you from knowing exactly what the culprit was, but doing things one at a time can take forever and you may never figure out what changed before it changes again.

Lastly, a harshness or slightly off flavor can also come from a low level infection of your brewhouse.  I'd give everything a good cleaning and soak, and maybe consider replacing plastic lines as much as possible.

Thats my two cents, worth most of that anyway.

I've put carbonated beer in a wooden cask (3gal in this case) and served it that way.  If you try carbonating, be sure you hammer the bung and tap in good first and go for a low carbonatino level.  You have a chance but this isn't ideal by any means.  I think you're safer racking in pre-carbonated beer.

I think you need more roast barley, 10%.  Then use hard water, I use tap water for stout.  I don't think you want a soft water for this style.

Thanks I googled this and found what you're talking about through UK Brewing, I passed this on to the distributor guy.  I hope he buys a jacket and a pack of ten of these ice blankets.  I also pointed him to the nice spring-loaded stillage, crossing my fingers on that.
