I have 40 pounds of corn sugar already, I guess I should have mentioned that. 

I might barely have the 1.5# of cane sugar I need for my recipe but have no issues with picking up a new bag to cover it.

If using the same amount of corn or cane sugar by weight in a recipe how would the results differ, specifically in an Imperial IPA?

Different final gravity?  Original gravity?  Flavor?  More or less noticable alcohol presence?  What would you expect?  Which would you prefer using?

Beer Recipes / Ideas needed for recipe similar to Hop Stoopid

I would like to brew a beer similar to Hop Stoopid in flavor, but with an O.G. of around 1.058 to 1.060.

I am pretty sure that Hop Stoopis uses a lot of Simcoe hops and I believe that the Lagunitas house yeast is based on Wyeast 1968 London ESB, beyond these two things I am not sure where to start and I am open to all suggestions.

I am not interested in using hop extract but could be swayed, I guess.  I prefer to use pellets and whole hops.

I finished off a keg of this last night and enjoyed every drop.
OG was 1.052.  Turned out very dark, as black as the commercial ones I have had

With current outdoor temperatures I think they would see temperatures above 160 during chilling for at least 10 minutes, but maybe moving them back or splitting them into 2 additions is a good idea.  I would be using all pellet hops if that makes any difference.

I also didn't list and dry hopping but would be doing that for sure, just haven't worked out what that would be.

I have a chest for crashing to remove my dry hops.

Elysian's Great Pumpkin for this year had pumpkin seeds in the mash and it was fantastic.

I tried it with roasted pumpkin seeds in my second batch of pumpkin beer last fall and the first batch turned out much better, not sure if it was because of the seeds, may have been changes in the squash.

I didn't have any trouble with head retention.

I found a recipe for the Stone Sublimely Self-Righteous online that supposedly came from the brewery.

I am looking at this recipe, sized in boil volume to work with my mashtun

10 gallons
O.G. 1.082
F.G. 1.019
I.B.U. 119

27# 2-row
1# 6oz. Crystal 60L
1# 6oz. Carafa III

6.25oz. Chinook 60min.
3.5oz.   Simcoe 1min.
3.6oz.   Amarillo 1 min.

I will need to figure out substitutes for the Simcoe hops, suggestions are welcomed.  Maybe some Northern Brewer.  I may substitute Cascades for the Amarillo because I have several pounds of Cascade hops.

All thoughts welcome
