I have never heard anything positive about the canister filters. Plate filters can be a PITA. I have totally eschewed filtering. I have single walled bright tanks that are held around 36-38 degrees. I use a product called Biofine Clear A3 (it's vegan, if that means anything to you) and add it to the bright tanks after a yeast dump. the BFCA3 drops the beer brilliantly clear, so much so that I have had to back way off on my IPA because it was stripping out all the hop flavor and aroma.

I know Thirsty Monk filters, but I would recommend trying to avoid it if at all possible.

At what concentration are you adding the BioFine?  The recommended?  More or less?  Also, how big are your brights and how long are you waiting before packaging?

The science will tell you that minerals are necessary for several reasons.  While this is the one of the only styles I consistently brewed with 100% RO, I will say I brewed many other styles with only kettle salt additions (no minerals in the mash).  I've never had a single person comment on anything water related (mouthfeel, flavor, clarity, etc.) on a scoresheet or in person.  I've done this in Wits, Hefeweizens, and American Lagers, all winning awards.  Most people tell me I need some Ca for flocculation.  The BoPils and every other 100% RO beer that I've brewed flocc'd out to brilliant within a couple weeks.

I acidify all of my HL to 5.5-6 prior to brewing.

The time has finally come!  The entry window for Sunshine Challenge '11 is open and we are waiting for your beers.  You have until October 26 to get your entries to our lovely and beautiful registrar or to Heart's Homebrew.  The homebrew railroad will be picking up at Commander Saaz on October 15 and at Southern Brewing (Tampa) on October 20th.
