I have an IPA on tap that was 30% Pils. I boiled for 60 minutes and did a 30 minute hop stand before I chilled. I recirculated and did not fully cover. I had no lid for 10 minutes or so then I put the lid on Partially (I have an IC chiller). The beer is top notch!p

My taste buds say keep the wheat when using the Chimay yeast (1214). Not sure you need the aromatic but YMMV. My buds also tell me that when using the Westmalle yeast, keep it simple. Pils, sugar and maybe a touch of Munich or Aromatic...

I've used yeast that was 3.5 yrs old. I started slow. Like 500ml. Kept ranching up rather slowly. Make sure yeast is done at each stage. Took me 2 weeks but made some good beer!
