Does anyone else have a 'sticking point' with their thermapen ?

Mine has always had one - open the probe about 100 degrees and it comes on, keep opening it and it goes off at about 150. Keep opening and it goes back on again at about 170.

bit annoying but I live with it. seems to help if i 'excercise' the probe by opening fully and closing a few times. its always been like this.

Anyone ever opened one up? I would like to see if theres anything obviously wrong, but not sure if it will be difficult to put back together again afterwards.

Does anyone know how much yeast is sufficient for krausening if your trying to reduce diacetyl ? (I'm not concerned with carbonating the beer at this stage)

I cant seem to find a patching rate estimate for this. I have heard "make a starter" but I have also heard "we are not trying to get yeast growth". Both true I suppose, but still, how much yeast is needed to do this clean up operation ? 100 billion cells (one fresh pack) per 5 gallons ? and is this assuming no growth in the starter ?

Martin, when you say make sure your wort pH in the kettle ends up in the 5.3 to 5.4 range when measured at room temperature...

Do you mean pH at the start of the boil or end of the boil ?
