I to was able to enjoy a bottle of Squal. And I enjoyed the sweet hoppy bite it had. But being in Wisconsin i have to buy all the dogfish i can now or make runs to Chicago. We all have heard about dogfish backing down there selling states so no need to go into detail..

I say make it not hard and you can save some money. and if you want you can take it and make it a counterflow chill just by getting some more fittings and a garden hose. That is what i plan on doing

I plan on doing a porter this weekend. I am getting teh kit from Nothern Brewer

But instead of Burbon I plan on adding sailor Jerry. And i am hoping It adds the Flovoring i want cause the sailer has a cherry floavor to it that i am hoping it imparts to it.

Are you asking about why elements are together on one side Instead of spread across the kettle?
Liquid movement.
This should promote rolling boil.

Would have never thought of that at first but the idea is brilliant and simple and efficent.

Nice work and i may have to make a trip out there when it opens up.

7. Tips for reading the hydrometer - It's sticking to the side of the thief - any way we can avoid that? Just swirl and go?

Don't use the Beer thief to hold the wort for measuring you want to buy a test jar to hold the wort for measuring. But if you plan on doing this for a while I would suggest getting a Refractometer. Easier to read and more accuate. but then again I just hated reading a hydrometer.

10. Anyone use 5 gallon buckets for 5 gallon brews? Or is that bad? I have a few 5-gallon buckets, but after talking to the knuckleheads (yes, we have not been impressed by their weakly bubbling "fountain" of knowledge... and we're newbies!) at the local brew shop, they insist that 6.5 gallon or larger vessels are the only way to do it. That being said - how much does/can the wort foam up during fermentation?

IF you are using a five gallon bucket for a five gallon batch you are going to get a nasty little mess to clean up from fermentation blowing off the lid/airlock. You want a larger vessel to avoid this problem. It really only is an issue during primary.

11. Strainer vs funnel screen for pouring wort into primary - We have a funnel w/ a mesh screen - it seems SO fine that it might only be good for... umm... not really sure. A strainer seems coarse enough that the sediment and junk will be caught in it without significantly hindering the flow, right? But, what about funnel screen?

I have found out that that strainer works just fine as long as it is fairly fine cause the particulate will clogs it up and esentially make it finer screen. And i don't know other peoples belief on this but i have found it helps aerate the wort for pitching too. And when my main primary bucket is in use and i need to use a 6.5 gallon carboy the funnel and screen works but it clogs alot fast so then i use a combition of both.

 
12. Bucket of sanitizer. From what I understand, StarSan is recyclable, so I'm wondering if it's got a "shelf life" - Can I leave a bucket full of starsan/water so that I can drop a Thief/Hydrometer/whatever the heck i want in for 20-30 minutes during the week, take a gravity reading, or whatever. Just seems easier if I don't have to whip up a batch of sanitizer just to take a gravity reading.

That ius the great thing about starsan is that it keeps for a while and it is recyclable since it is not used for cleaning but only sanitizing. and the way to check if it is still good is to get some ph strips. Since starsan is acid based you need to check the ph. If my memory severs right it needs to be at a ph of 3 or less. But I would check on that again.

And I am tapping out cause my beer is empty and sleep is calling my bed. Enjoy brewing.

Thanks for the Blichman link. I am doing the first set right now which is lay out and planning. I have had an log running for a while and several over things have come to my mind and are now being included in design.

This is going to to be a fun build. Time line about 6 months so planning is the majority.

My suggestion is going with a NG burner with smaller, more focused flames. You'll waste less gas and heat.

Been reading this and thinking that a 10 nozzle burner would work fine but is it possible to dial it down

So I am looking to build my all grain system I have been wanting to build finally, I have the design down minus a few engineering changes that will be made once I get some imput.

I have a natural gas line in my basement that is caped and has a shut off valve for an old stove my family had in the basement when we did canning. Which also works great since we still have the vent system in just need to clean is out and unplug the exhuast. I want to use that line to fuel the burners.

but now to the point what type of burners work best for this setup. Using natural gas and mountable. Making the mounts is no problem being a machinist and decent at welding too. but i need to know some good one that people have used or would use.

I do alot of brewing work in my basement and the lighting sucks in general but the fermanting room is an old cellar which is always dark and always at about 65 ish. looking at buying rail led light system for the work area.

That would even work for me. But until then the money i had alocated is going to be used for an all grain system.

I may be only 24 years old but i have standards to. Seen and doored to many house parties to drink anything lower than PBR and i have a little place in my keezer for Mickeys as a family joke. Plus i had my first beer in Germany on an exchange program and was there to witness the renew of the Reinheitsgebot which happens every two years ago.Now that was fun.

I am in the place as you with the NHC being really expensive and not just the event tickets. I just did a cost analysis today and realized that it is is going to cost about 2.5 grand for me to. but contrary to your cost that includes everything with food and all. IT would add up to  the 3 grand with possible lost wages and over time and the use of half of my vacation time.

It kinda sucks. I guess I can create my own version by brewing all weekend.

being a younger person does not mean I don't know my music.

The Wall is unusally in rotation in my basement where i do the brewing. And then there are the two local local indepent radio stations here in Milwaukee that have a great rotation of new and old and random music. But when i am alone on a brew day or have a friend over ska is what is playing.

I go back to first wave ska with The Skatalites second wave / two tone with ie The toasters and third wave which is hit and miss. But one of my favorites to play is Streetlight Manifesto and i know they are really just catch 22 version 2.0, real big fish, Bosstones, and to many others to list. I really just play whatever the mood is and what the kettle tells me.

And weazletoe that is the best mix cds ever.
