Apparently Ca protects enzymes from being denatured to some extent but I don't think it is super-critical.

To sanitize the foil, I always hold it over the flame on my stove (or the heating coil).  The heat conductivity is so high, and the mass so low, that it gets to sterilization temps quickly.  Then it cools down immediately.  Very simple.

After a series of infections in my glass carboy (yeah, I cleaned and sanitized...over an over), I switched to some buckets because they were so cheap.  I prefer them now because they are cheaper, safer, and easier to carry.  I do miss watching fermentation and I really liked the idea that all my beer was in contact was glass with carboys, but I'm doing buckets for now.  I got 3 of em.

Thanks for the advice.  My numbers ended up being high, as I brewed before I got a response.  Hopefully it will turn out alright.  I may add a little CaCl to balance out the sulfate.

So, after thinking about it, 800 ppm SO4 seems way high to me.  Do people actually get good results with this much SO4?  I measured out 20 grams of gypsum, and its like 2 tablespoons worth.  I know thats what Burton water is like, but it seems excessive to me.  It kinda scares me to be honest  ;)

I believe in fighting The Man too, but I don't think NB is The Man.  I learned most of what I know about homebrewing at that forum, which they graciously hosted.  It was a win-win for both parties.  But if I worked for that company, I would have deleted that thread too.  It's their site, not a public site, and its bad for their business for people to be so blatantly dissing them on their own forum.

I never went on Brewhaha so I didn't feel miffed when it was removed, obviously some people did.

I just feel like I've always gotten good service from them, and they seem like a good company.

As for how long you need to wait until you are ready, I'm sure it is faster, but I can't be more specific.  But you may want to consider letting it ferment all the way, cold crashing, decanting the 'beer', and pitching the yeast slurry.  That's the best way, IMO, to make sure the yeast has used the oxygen to build strong healthy cell walls and that you don't get any off flavors from the starter 'beer'.
