You should ferment until done ;)

If you could have the recipe for one commercial beer which beer would it be and why?

I'd choose the original Schlitz beer before the recipe was "lost" during the disastrous recipe and process changes made in the early 70's.

I actually have that recipe.
And I have actually brewed that recipe, thanks denny

Now let me tell you about Wisconsin. 6 month winter then hot in summer and road construction. I think this is a great place to retire.

Showed the picture to Susan and pointed out the grey and thinner body, she said those 2 probably go hand in hand when you open a brewery.
Yea, you should see mine. We've only been open  about 1. Month and I swear every day the hair gets whiter and whiter.

If you guys have been watching us on facebook you know that we are brewing, if not then here's an update. We finally got our fed license Tuesday, only took about 150 days :( , passivated cleaned and sanitized fermenters,  and yesterday made our first batch of beer. Then we will be brewing all next week to get all fermenters filled,and plan on opening dec 27.
We didn't realize until we got done brewing that we made our first batch on the same day that prohibition was repealed just 81 years earlier.

Plastic is phenolic, usually yeast infection or some yeast at high temps will give this. What beer was it?

Its a Culligan under the kitchen sink system.  I have to start drawing water out of it the day before brew day because I only have a 3 gallon pressure tank.  I usually end up setting my phone to beep every 40 minutes so I can go draw another gallon off.  That gives it recharge time so that the pressure is good when I do.
We are going to use RO for our commercial brewery, 10. Bbl. and will have to collect about 500. Gallon. That's going to take awhile.
