Could frost at anytime, but looks promising for another couple of weeks.  I have a few
cow horn peppers and cubanelles, and yellow squash hanging on....some new flushes of
spinach and yes.....SNOW peas are putting on again.  Grape and pear maters are going wild.

Caution!  in my training and several seasons as a life guard, the victim will try to climb on top of your head
especially in high panic moments. You as the rescue person must be aware of this response as well else you
become the victim.

Sir,
Your English is not so bad.  My Spanish is far worse.  In my opinion, you will be well served
with your project to get 2 Stainless Steel Cornielius Kegs.  You can then put your barrel aged
beer into the Kegs and force carbonate them, That would be the best thing I can think of for you.

Look at Avery brewing in Boulder's  Barrel Aged Series of beer.  They will not put out anything
but a winning combination.  And they put out a lot of good barrel aged special inaugural beers.

Yep, the flaked maize is just put in the mash.  I tried to cook it prior to mashing
and it just was not worth the extra steps/effort IMO.

Herman Holtrop's (google is your friend) rochefort 8 clone recipe is a fantastic
BSDA and It served as the basis for a great solera project that is documented on
this forum somewhere, in a brewery, far, far, away.......
It wound up being a marvelous sour cherry kriek after a couple of years.
That would be my suggestion.
