All Grain Brewing / Traditional Bock Rostmalz replacement

 am going to be brewing sometime a traditonal bock from Jamils book. I know he has rostmalz from germany in it. I know we cannot get it. What would be a good carmel malt to use in place of it. I am thinking 120L but I am not sure if it is dark carmalized enough.

Any suggestions.

I have use the pet plastic better bottles for more than five years.  It is the ones that are NOT ported.  I had no problems and love them.  If I need to store a lager for an extended time, I will put it in my corny keg.

General Homebrew Discussion / Toasting an oak dowel for flanders red

I got some white oak dowels for a flanders red, but I can't seem to find out how to get a medium toast on my white oak.  I know I should put it in the oven for a certain amount of time at a certain temp, but I googled and can't find it.  Has anyone done this and how to toast it, it would be appreciated.

Yeast and Fermentation / Low yeast for Hefe weizen

I read that for a WLP300 hefeweizen ale yeast is to pitch a little low but enough yeast to stress it for the aromas of a weizen yeast.  Has anyone tried this and to know how much is low to do that.  I figured for my volume since I have a fresh vial that if not a weizen but an ale I would pitch 1000ml. 

Any suggestions would be nice.
