I did a decoction for one of my lagers a while back. While I was heating it, I got distracted and scorched some of the grain on the bottom of the pot. There was a pretty good layer of burnt grain on there. Anyway, I figured what the heck, and dumped the unburned grain back into the mash. I tried some last night and it's got a distinct bitter, burned flavor to it.

This happen to anyone else? Will it fade over time or should I just ditch this batch? It's been about six weeks since I brewed this.

Kegging and Bottling / Bottling question

Do you sanitize the caps before you cap your bottles? I don't, but I'm wondering if I should. No problems so far but I'm curious what you other bottlers do.

I have a 5 gal batch in the fridge fermenting. I also have a bunch of commercial beer bottles in there. If I turn the temp down to 38, why did I find a chunk of ice floating in my 5 gal batch, but the bottles in there did not freeze first. I am confused.

The Pub / The best copliment I've ever gotten

I have a 20 year old daughter. She is in college and has had a series of terrible boyfriends (drugs, crime, etc). About a year ago she started dating a new guy. We were skeptical, but her sister claimed he was "a really nice guy". We met him very briefly about a month ago, and then yesterday we took them both to lunch, just to get to know him a little better. This kid is not exactly like me, but he's real close. Light hair, light skin, just like me. Easy going, doesn't say much, just like me (especially at 21). And, he brews his own beer! Just like me. Apparently his family lives close to the campus so he can get there a lot. His dad brews too and they have a yard full of hops. We were laughing about it the entire ride back home. I'm sure it won't last forever, but I'm glad she is finding out what a normal, decent boyfriend is like. And she gets free beer!

Got some of this from our local brewery for Christmas, and wow, I really love it. I've tried a few Belgian beers before but nothing that really made me want to brew 5 gallons. Until now.

Any great commercial examples I should try before jumping in and brewing a batch?

This stuff is perfect for a cold, stormy, winter night in front of the fire, like tonight.

General Homebrew Discussion / Stink bugs killing my hops
« on: August 13, 2012, 05:21:51 PM »
Noticed yesterday that one section of hops on one of my plants were starting to turn brown. Seemed a little early for harvest so I though I'd wait another day or so. I checked on them tonight and they were almost totally brown and covered by about a hundred of these little pests. Spayed some bug killer on them which should help, but now I'm wondering if I should take a chance and harvest early to get my hops before they do. I think I'd rather have some less bitter hops than none at all. Also, I don't want to spray bug killer on the whole plant. Probably not something I want in my beer.
I've never had any bugs attack my hops before. It is crazy.

General Homebrew Discussion / Why I brew
« on: February 29, 2012, 01:18:23 PM »
Went to a friends house over the weekend. He is a great guy, always telling me how good my beer is, even that it's better than what we can get at the local micro-brewery (ok I don't think it THAT good, they make some really nice stuff).

I brought some of my own and he had a selection of Sam Adams brews. We both had two glasses of my stout, and then had a glass of the Sam Adams stout.

As I was drinking it, I thought to myself "This is good, but mine is better."

Ingredients / Male hop plant
« on: July 18, 2011, 06:09:30 PM »
I have a second year east kent goldings plant that is growing just fine, but I'm pretty sure it's a male plant. No cones, but lots of bunches of flowerish buds.

What do I do with this thing?

Interesting article about why a lot of the micro brews are not in the windy city.

Yeast and Fermentation / Dry yeast fermentation temp

What is the preferred temp to ferment US-05 and S-04? I haven't used dried yeast in a long time.
