Anyone have a good technique for getting a lemon flavor to carry over into a finished beer? Im typically not into beers with added flavors but I had a lemon weiss beer that I liked recently and want to do something similar. I think dropping the ph of the ph with citric or lactic acid will get some of the way there but Id like some actually lemon flavor

I've always just went with what the hops aa's were when I bought them but planning for a brew today I plugged each hop into beersmiths hop tool and it resulted in a pretty big difference in ibus. All hops are 2016 harvest stored in food saver or original package  in freezer. Has the decline in aa's been proven to be accurate given modern storage processes? Beersmith asked hop storage index, temp, and package


What are you guys doing? Adjusting or leaving as is?  I realize either way is a guess, I'm just looking for the best guess

Does anyone know anything about this beer? Is it scaled down directly from the 8 or does the recipe vary between the strengths? I found this 8 clone from Herman Holtrop but nothing on rochefort 6.

70.4 2375 grams Pilsnermalt (Belgian)
11.1 375 grams Caramunich 120 EBC
1.5 50 grams Carafa special dehusked 800 EBC
3.7 125 grams Special "B"
3.7 125 grams Flaked Corn
9.6 325 grams Dark Candysugar

My recent keg of Vienna lager has developed an off flavor I think may be due to infection. When I first started serving the keg I was getting a lot of foam. I tried ever thing and eventually dissembled the tap and found mold and gross gunk. That stopped the foaming but the beer now has a caramel/tang.

 Is it possible for a keg to get infected from the tap? I didn't think the beer would run back into the keg but that's the only thing I can think of. I haven't had any infected batches in years

Looking back the last batch I served from the tap also had a strange caramel flavor. At the time I thought it was just a bad recipe and me not likening golden naked oats.

I circulate Blc through my lines and taps but clearly especially for that tap I need to disassemble. The perlick ss were all in good shape when I disassembled them.

Kegging and Bottling / Help with spunding valve

I build a spunding valve with the standard setup based around the  control systems pressure relief valve. I can't seem to get any predictable results out of it. My process is

Pressurize an empty keg above where I want to end up

attach spunding valve and allow pressure to head towards where I want. As it gets closer I gradually slow the release until I finally stop it at my pressure. I've left it for days like this and its stayed where I stopped it

The issue is when I repressure the keg to test setting is a crap shoot where it ends up. Sometimes it'll stop way before sometimes way below.

Any advice ? I know a lot of people are using it and making it wirk

I've been filling my kegs with io star to purge and sanitize. If I pushed into another keg rather than a bucket would it still be safe to say that the receiving keg would still sanitary and ready to go when ever I needed it? I hate dumping 5 gallons down the drain every time that I keg a batch and always having a keg ready would be nice.

I've had trouble making time to brew lately. Tomorrow I have a gose planned and unfortunately didn't get my lacto culture going in time. I'm going to just add lactic acid post fermentation. What's a good starting point? I read 2-3 oz of 88% in a zymurgy article I'm thinking of adding a small amount of citric acid as well

I tried a few hefeweizen beers early in my craft beer journey and wrote them off. I tried a local ish hefeweizen today and loved it . Susquehanna so wheat is the beer. Very little banana which is what turned me off. Any advice on brewing a low banana Weiss. Seems like wyeast 3638 is the way to go for yeast

Has anyone had success doing a lager with a shaken not stirred starter? If so what was you process? I do 1 qt starter in a gallon glass jug for my ales. All the lagers I'll be doing are right around 1.050.

Ingredients / Essential German hops

I've recently decided to dedicate most of my brewing to German styles. I don't have much experience with German hops and they all seem to be subs and very similar based off of descriptions. Most of my brewing in the last 5 years has been English and American styles.


The Germans hops I have are
Mt hood
German tettanger
German perle

Are there any others worth getting? I'm looking to brew helles, Vienna lager, Dunkel, pils, alt, gose, Weiss

All Grain Brewing / 2 rest step mash

I want to try a step mash. I am infusing mashing so I only want 2 rests. What 2 temps would at least theoretically be most beneficial? The batch will be a Helles

Has anyone else seen the show Beerland on the Viceland channel? Meg Gill, the founder of Golden road brewery in Los Angeles, travels around to home brewers and checks out their brewing and local scene. The best brewer of each episode moves on till eventually a winner gets to brew a beer at her brewery. Pretty cool.

I looked up Golden road brewing and happen to click jobs, All AB brands showed up. Hmm. After a quick search yes Golden road is now a AB-inbev brand. Not so cool

I got a sample of this with my new spike kettle. It worked good and after reading up on it I like the idea of it compared to oxy type cleaners. But at their dose of 1 oz per gallon, its way too expensive. I see craftmeisters products are getting love but at 2-3 $ to clean a 5 gallon keg I don't think I'm sold. Am I missing something?

Beer Recipes / Multi grain lager

I'm toying around with a multi grain lager. Which non barely ingredients would you use? My recipe so far is 70% pils, 10% oat malt, 10% rye malt, 10% wheat malt. The rest of the recipe will be perle for bittering and .5 oz tettenger at 15. 34/70 yeast. Any suggestions ?
